Ginger Jam
1 pound (approximately) fresh ginger root
2 tablespoons lemon juice
1 3/4 ounce package powdered fruit pectin
5 cups granulated sugar
Remove outer skin from ginger root and cut ginger into 1-inch thick slices. Place in a 5 quart microwave-safe casserole and fill 3/4 full with cold water. Microwave on HIGH (600-700 watts) 25 minutes (it should boil for 15 minutes and will take about 10 minutes to reach boiling point). Drain ginger in colander. Return to casserole and fill 3/4 full with cold water. Microwave on HIGH until ginger is tender-crisp and can be pierced with a fork, about 45 minutes. Let stand, covered, about 10 minutes.
Drain in colander, return to casserole and fill 3/4 full with fresh cold water. Let stand 15 minutes, then drain well. In food processor or by hand, chop ginger until it is the size of rice grains. Do not puree. There should be about 2 1/2 cups of chopped ginger. Place it in the casserole. Add 1 cup cold lemon juice and fruit pectin. Microwave on HIGH until mixture comes to a full boil, about 5 minutes. Immediately stir in all sugar. Continue cooking on HIGH until it reaches a rolling boil. Allow it to boil hard for a full minute. Remove from microwave and use a metal spoon to skim off any foam that might appear on the top.
Immediately ladle into hot clean jars, leaving 1/4-inch space at top. With a damp cloth, wipe jar rims clean and add lids. Jars should then be covered with hot paraffin and sealed with hot lids or freeze.

For example, Dazed and Confused launched the careers of Matthew McConaughey (A Time to Kill), Parker Posey (Waiting for Guffman), Adam Goldberg (Saving Private Ryan), and Anthony Rapp (star in the original cast of the Broadway musical sensation, Rent). SubUrbia, based on the play by monologist Eric Bogosian, is the first Linklater-directed film that he didn't also write, and although the result feels more in-your-face Bogosian than laid-back Linklater, his way with actors is still very much in evidence.
SubUrbia centers on a group of bored, aimless, post-high-school kids who spend an inordinate amount of time hanging out in the parking lot of a local convenience store. It all takes place over a single night, when a fellow classmate by the name of Pony (Jayce Bartok), who has become a hot pop star since graduation, returns with his limo and his publicist (Posey) to do a little slumming in his hometown. Giovanni Ribisi (Saving Private Ryan) as the introspective Jeff, Ajay Naidu as the proprietor of the Circle A (for "anarchy"), and Steve Zahn (Out of Sight) as the buffoonish Buff, are also very impressive in a movie that's a real showcase for its terrific actors. --Jim Emerson

On her first day of work, Sue Applegate (Ginger Rogers) has to escape the clutches of a lecherous client (Robert Benchley, whose favorite line is "Why don't you slip out of that wet coat and into a dry martini?"). Fed up with the big city, Sue decides to head home to Iowa with the precious $27.50 train fare she's kept in a sealed envelope since her arrival. The fare has gone up, however, and she is forced to pose as a 12-year-old to buy a half-price ticket. On the train, she has to dodge the suspicious conductors and bursts into the compartment of Major Phillip Kirby (Ray Milland), who falls for Sue's masquerade and harbors her for the night. The situation is further complicated by the major's fiancée (Rita Johnson) and her savvy 12-year-old sister (Diana Lynn), the only one who sees through the ruse. Add a stay at the major's academy and some escapades with young, hormone-driven cadets, and you have an enjoyable, if not quite classic, silly comedy, well paced by Billy Wilder in his first directorial effort. Rogers's real-life mother appears in a small role as Sue's mother. Rogers is only occasionally convincing as a 12-year-old, but after all she was 30 at the time. --David Horiuchi
