Greek Souvlaki with Tzaziki
Yield: 6 servings
Souvlaki
2 pounds lamb shoulder or 2 pound sirloin tip in 1 1/2-inch chunks
2 cups dry red wine
2 garlic cloves, minced
1 teaspoon dried oregano
2 teaspoons lemon rind, long strips
1/4 cup olive oil
Sweet peppers and cherry tomatoes as needed
Tzaziki
2 cups plain yogurt
1/2 English cucumber, peeled and grated
2 garlic cloves, minced
3 tablespoons olive oil
1 teaspoon salt
Begin preparing the tzaziki a few hours before serving. The flavors need time to blend.
Marinate the meat overnight to absorb the wine and garlic.
Souvlaki: Place the meat in a large bowl. Pour in the wine and sprinkle minced garlic and oregano. Imbed the lemon strips among the cubes of meat and drizzle with olive oil. Cover tightly with plastic wrap and refrigerate 12 hours or overnight. Shake or stir the mixture several times during the marinating period.
About 30 minutes before serving, drain off and discard the marinade. Thread the chunks of meat onto long skewers, brushing with a little olive oil. (We usually barbecue the peppers and tomatoes on separate skewers but it's really up to the chef.)
Over medium coals, barbecue the souvlaki until it's done the way you like it.
Serve on a bed of rice and pass the tzaziki to spoon on top.
Tzaziki: Line a colander or sieve with cheesecloth (or gauze) and set it over a bowl. Pour in the yogurt and allow it to drip for an hour or so.
After the yogurt has drained, combine it, in a small bowl, with the cucumber and the garlic. Cover the bowl tightly with plastic wrap and refrigerate until just before serving.
While the meat is barbecuing, drizzle the olive oil over the surface, and without stirring, sprinkle on the salt. It needs no mixing - your guests will do that when they dollop it onto their souvlaki.

Both Chicago and Earth, Wind & Fire, have soldiered on despite key personnel changes over the years (Chicago bassist-singer Peter Cetera and EWF founder Maurice White are long gone, and much missed); here they perform energetic and tasteful versions of everything from "Make Me Smile," "I'm a Man," and "Saturday in the Park" (Chicago) to "That's the Way of the World," "Fantasy," and "Serpentine Fire" (EWF), among many others, to rapturous response. Like The Gumball Rally (1976) before it, former stuntman Hal Needham's The Cannonball Run was inspired by the same real-life cross-country road race. If The Gumball Rally was the critical favorite, The Cannonball Run was the box-office favorite (spawning the almost-as-successful sequel, Cannonball Run II, a few years later). Aside from top-billed stars Burt Reynolds and Dom DeLuise (stars of Needham's Smokey and the Bandit series) plus Dean Martin and Sammy Davis Jr. (as horny priests), the movie features many of the same actors (Bert Convy, Jamie Farr) that could be found on a typical '80s episode of The Love Boat (along with the same caliber of writing). But as the tagline notes, "You'll never guess who wins"--and it's true. As in most road-race movies, it's the journey that counts, not the destination. This particular journey includes cool cars (like Adrienne Barbeau's black Lamborghini), crazed bikers (led by Peter "Easy Rider" Fonda), hot martial arts action (from Jackie Chan as a Japanese racecar driver), a conspicuously braless Farrah Fawcett (recipient of a Golden Raspberry nomination for her performance), and possibly the most egregious use of product placement featured in a movie up until that time (one vehicle has "GMC Trucks" noted prominently along the top of the windshield, another has "Hawaiian Tropic" painted on the hood). As with many of the films Jackie Chan has made for Golden Harvest, the Hong Kong-based production company behind The Cannonball Run, wacky outtakes are included during the closing credits. --Kathleen C. It's not surprising that My Big Fat Greek Wedding grew more popular over the course of its theatrical release (whereas most blockbusters open big and then drop precipitously)--not only does it have believable situations and engaging characters, but these characters (particularly our romantic heroine, Toula, played by writer and performer Nia Vardalos) look like actual human beings instead of plastic movie stars. The result is the very accessible tale of Greek-American Toula (whose family sees her as over the hill at 30), who falls for a WASPy guy named Ian (John Corbett) and then has to endure the outrage, doubt, and ultimate acceptance of her deeply ethnically centered family. The actors invest their wildly stereotypical portrayals with sincerity and compassion, giving the movie an honest warmth instead of Hollywood schmaltz. This instantly addictive series may not be, as its creators intended, "the definitive fun college show," but it gets high marks for its appealing cast, smart writing, and reasonably clear-eyed portrayal of fraternity and sorority life. Jacob Zachar stars as Rusty Cartwright, an incoming freshman at Cyprus Rhodes University. He is a geeky science major and socially awkward (his first taste of tequila earns him the nickname "Spitter"). But he is eager to join a fraternity and "have a real college experience." The soapsuds froth early. His sister, Casey (Spencer Grammer, Kelsey's daughter) is campus royalty, a junior with a wealthy and well-connected boyfriend, Evan (Jake McDorman). She is also "heir to the throne" of her "best of the best" sorority house. So embarrassed is she by Rusty, she has never told anyone she had a brother. "You have your world, and I have mine," she dismisses him early on. But her world is rocked after Rusty accidentally catches Evan about to cheat on Casey with Rebecca Logan (Dilshad Vadsaria), a senator's daughter and highly prized pledge who Casey has been charged to bring in to the sorority at all costs.
Greek is not just kids behaving badly. What moves this series to the head of the class is that its characters struggle with doing the right thing, and as Casey tells Rusty, "sometimes doing the right thing isn't doing the right thing," adding, "It's shades of grey from here on out." Greek creates compelling moral dilemmas and should spark worthwhile family discussions. Should Rusty tell his sister about Evan and ruin his chance to join Evan's elite fraternity? Should Casey break up with Evan and risk her social standing? Greek is all about acceptance and how friends can become like an extended family. Rusty finds his at a rowdy Animal House-like frat headed by Cappie (Scott Foster), Casey's less reputable former boyfriend. Though Rusty may be lame, he proclaims, "he'd be fun to corrupt and bring to the dark side." How Rusty wrestles with his ideals and reconnects with Casey is at the heart of this auspicious season. Greek does traffic in stereotypes, but most of the characters emerge as fully dimensional, including Evan, less of a jerk and more soulful than one would expect, and Dale (Clark Duke), Rusty's "fundamentalist hick" roommate, who becomes less of an easy punch line as the season progresses. For a show that at one point gives a shout-out to Gilmore Girls, Greek's own pop-culture references (from The Matrix and Monty Python to Grey's Anatomy) are spot-on. Beyond that, the character-based writing is well observed. After a first date, a euphoric Rusty calls it the best night of life, adding, "Even better than the time they announced Pluto wasn't a planet. I hated Pluto."
