Mai Tai Pie
2 cups flaked coconut
1/4 cup melted butter
8 ounces cream cheese
1 (14 ounce) can sweetened condensed milk
2 tablespoons orange flavored liqueur
1 (6 ounce) can unsweetened orange juice concentrate, thawed
1/3 cup light rum
1 (4 1/2 ounce) container Cool Whip, thawed
Orange slices
Combine coconut and butter, mixing well. Press into bottom and up sides of a 9-inch pie pan. Bake at 300 degrees F for 25 minutes. Cool.
Beat cheese until fluffy. Add milk and orange concentrate and beat until smooth. Add rum and liqueur. Fold in Cool Whip. Pour into cooled pie crust and refrigerate 6 hours.
Garnish with orange slices.
Serves 7.

When he was growing up, Andrea Bocelli recalls finding inspiration in a favorite recording of sacred music performed by tenor legend Franco Corelli. Bocelli--who in the meantime has come to inspire millions of fiercely loyal fans himself--returns to the genre as the guiding theme of Sacred Arias, the release of which coincides with the first English-language biography of the singer. These performances are filled with the singer's phenomenally well-known vocal signature: his flair for long, sweetly floating high notes and the gentle sense of cadence he brings to a melody. It's a mistake to compartmentalize Bocelli into a singer of "operatic" versus "popular" styles: in truth his approach is at heart the same. Lack of color and control in his phrasing remains a drawback, but the emotional empathy Bocelli evokes is never in doubt. The arias collected here sample some of the most famous devotional pieces: Schubert's "Ave Maria" and Mozart's transporting "Ave Verum," as well as an arrangement of "Silent Night" in which Bocelli tries out his English. There's also a decidedly odd choice of bedfellows for a program of "sacred" music, such as a song from Wagner's Wesendonck Lieder (whose "angel" is the object of an overpoweringly erotic attraction) and Handel's figurative ode to a tree, "Ombra mai fu." Still, Bocelli sings with an unfeigned directness that is sure to expand his already enormous following even further. --Thomas May

We've seen The Greatest Opera Show on Earth, The Yellow Guide: Classical Music, Best of the Millennium, and now there's The No. 1 Opera Album. But that's no surprise, since Universal has some of the finest interpreters in its catalogue to draw from. This two-CD set (at the price of one), for example, brings together the likes of Cecilia Bartoli, Renée Fleming, Luciano Pavarotti, Kiri Te Kanawa, Sir Georg Solti, Herbert von Karajan, and many more. Yet the other key to a successful compilation is canny anthologizing, and here again, you have a nice selection to give you a smattering of opera's heavyweights from the Italian, German, and French repertory (there's even a step outside the standard framework with an aria from Dvorák's lovely Rusalka). Ranging from 1959 to 1997, the choices from back catalogue will doubtless be the entry ticket for many into this grandest of the arts. --Sarah Chin

Régis Wargnier's 1992 Oscar winner for Best Foreign Film is a bit like watching paint dry, despite its exotic locale and lead performance by the legendary Catherine Deneuve (Belle de Jour, The Umbrellas of Cherbourg). Deneuve plays a wealthy French landowner, born and raised in Indochina, from 1930 until 1955, the year of a Communist takeover. The brewing political changes bound to upset her fortune and destiny find an even more personal parallel in her relationship with an adopted daughter (Linh Dan Pham), who grows up and becomes independent. This splendid adventure-fantasy from 1990 was adapted from Roald Dahl's book and directed by maverick British filmmaker Nicolas Roeg, who turned out to be a perfect (if seemingly unlikely) interpreter of Dahl's fiendishly clever tale of witchcraft in contemporary England. Scary, funny, and wildly entertaining, it's all about a young boy named Luke (Jasen Fisher) whose parents have died in a tragic accident, and whose grandmother (Mai Zetterling) takes him to a posh hotel in England, where a secret coven of witches is holding its annual convention. The Grand High Witch (Anjelica Huston, in a scene-stealing performance) has decreed that all children in England be turned into mice, and Luke and his pal Bruno (Charles Potter) are the first victims on the list. That's when the movie magicians from Jim Henson's creature shop have their work cut out for them, turning Luke and Bruno into clever little rodents and The Witches into a dazzling display of imaginative special effects, using a seamless combination of real mice and superb animatronic puppets. Director Roeg doesn't compromise the sinister edge of Dahl's story, but comedy gets equal time from the brilliant cast including Brenda Blethyn (from Secrets and Lies and Little Voice), Rowan Atkinson (of Black Adder and Mr. Bean fame), and Jane Horrocks (Little Voice) as the Grand High Witch's beleaguered assistant. Although it was largely neglected during its brief theatrical release, this wonderful movie has since enjoyed a thriving appreciation on video--see it and you'll understand why. --Jeff Shannon
