Leftover Turkey Casserole

2-3 cups turkey (or you could use chicken, ham or beef -
whatever you have left over)
1 to 2 cups gravy
2 cups mashed potatoes
1 (12 ounce) bag mixed vegetables (or any kind you prefer),
OR left over veggies from your dinner
Leftover stuffing, if you have it, or use your favorite
stuffing recipe, enough to top the casserole
Heat oven to 350 degrees F.
In a 9 x 13-inch pan or large oven-safe casserole dish (or whichever size is appropriate if you don't have as many leftovers), spread the mashed potatoes in the bottom of the pan, layer meat and vegetables over the potatoes. Spread gravy over the top, then top with leftover stuffing. If you don't have stuffing leftover, or don't care for it, you can put the mashed potatoes on top of the casserole to make a crust. Bake for approximately 30 minutes or until hot.
Serves 4-8, depending on the size of their appetites. The smaller size casserole will serve fewer people.

Will the Circle Be Unbroken, especially with
Circle veterans Jeff Hanna and Randy Scruggs (who produced this record) along for the ride. Leftover invite bluegrass and newgrass heroes and jam-band buddies to contribute here, and the results are as mixed as the musical influences. Clearly, Leftover thrive on the exuberant stomps and chuckles, as on their original "Dance on Your Head" and John Hartford's "Up on the Hill Where We Do the Boogie." Both Lucinda Williams (on the Cajun-flavored romp "Lines Around Your Eyes") and Taj Mahal (on the gentle "Lovin' in My Baby's Eyes") lead the band through worthy interpretations of their own songs, while Widespread Panic's John Bell helps turn "Nobody's Fault but Mine" into a sleepy, slow-burning gem. Yet earnestness simply does not become this band, and too many cuts have a poppy sincerity (remember the Dirt Band analogy) that plays away from Salmon's strengths.

O Cracker, Where Art Thou?View This Product at AmazonThe idea of taking rock or pop songs and spinning them into bluegrass rave-ups isn't a new one. Traditionalists such as Del McCoury have been doing it for years, and more recently jokesters Hayseed Dixie have turned it into a quickly predictable career, covering AC/DC , Kiss, and Aerosmith. Despite the title,
O Cracker, Where Art Thou? is not simply a well-worn gag. Dave Lowery and Johnny Hickman have teamed with the Colorado jam band Leftover Salmon to re-imagine 10 Cracker songs, and the results are surprisingly effective. Clearly, the guys in Leftover Salmon are great musicians, and any temptation toward improvisational excess is held in check by a respect for the songs, which span Cracker's career. Wisely, this includes a four-song cluster from the band's best album,
Kerosene Hat, including a sexy "Sweet Potato," which effortlessly melds bluegrass pickin' with New Orleans rhythm, and a version of "Low" haunted by creepy banjo, pedal steel-guitar, and a Hammond organ solo. Lowery's former band, Camper Van Beethoven, experimented with this sort of musical hybrid, too, with greater abandon but less instrumental expertise. There's no way that CVB could have pulled off the double-time banjo and mandolin fretwork required in a satisfyingly traditional run-through of "Teen Angst,"" or even made it through a simple country lament like "Mr. Wrong" without smirking a little too broadly. Fans of Camper Van will probably miss that band's punky attitude--which only surfaces once, on the smashed country waltz of "Eurotrash Girl"--but these 10 songs are good enough to be twisted into new shapes without betraying the old ones.
