Chocolate Applesauce Rum Cake
This recipe uses no eggs.
1/2 cup butter
1 1/4 cups granulated sugar
1/2 cup milk
1 1/2 cups applesauce
2 tablespoons dark rum
2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/8 teaspoon salt
1 cup raisins
1 cup chopped pecans
1/4 cup dark rum
Preheat oven to 350 degrees F. Grease and flour a 13 x 9-inch baking pan.
In a bowl, cream the butter or margarine with the sugar. Beat in the milk, applesauce and 2 tablespoons of rum.
In another bowl, stir together the flour, cocoa, baking soda, spices and salt. Beat into the creamed mixture and then stir in the raisins and pecans.
Pour the batter into the prepared baking pan. Bake the cake for 45 minutes or until it tests done with a wooden pick.
Immediately after removing the cake from the oven, sprinkle it with the remaining 1/4 cup rum. Let cool on a rack. This cake improves if allowed to sit for a day or so before eating.

It's the reinterpretations that are riskier. While Paul Westerberg's stripped-down, nasal reading of "Nowhere Man" perceptively underscores Lennon's inherent Dylan fetish and Howie Day turns "Help!" from anxious plea to desperate dirge, Grandaddy smugly alt-rocks the energy right out of "Revolution." The Beatles hardly need anyone to burnish their reputation, but this album goes a long way toward underscoring their most undersung legacy as rock's most transcendent melting pot. -Jerry McCulley

With movies like Chocolat, it's always best to relax your intellectual faculties and absorb the abundant sensual pleasures, be it the heart-stopping smile of chocolatier Juliette Binoche as she greets a new customer, an intoxicating cup of spiced hot cocoa, or the soothing guitar of an Irish gypsy played by Johnny Depp. Adapted by Robert Nelson Jacobs from Joanne Harris's popular novel and lovingly directed by Lasse Hallström, the film covers familiar territory and deals in broad metaphors that even a child could comprehend, so it's no surprise that some critics panned it with killjoy fervor. Their objections miss the point. Familiarity can be comforting and so can easy metaphors when placed in a fable that's as warmly inviting as this one.
Driven by fate, Vianne (Binoche) drifts into a tranquil French village with her daughter Anouk (Victoire Thivisol, from Ponette) in the winter of 1959. Her newly opened chocolatier is a source of attraction and fear, since Vianne's ability to revive the villagers' passions threatens to disrupt their repressive traditions. The pious mayor (Alfred Molina) sees Vianne as the enemy, and his war against her peaks with the arrival of "river rats" led by Roux (Depp), whose attraction to Vianne is immediate and reciprocal. Splendid subplots involve a battered wife (Lena Olin), a village elder (Judi Dench), and her estranged daughter (Carrie-Anne Moss), and while the film's broader strokes may be regrettable (if not for Molina's rich performance, the mayor would be a caricature), its subtleties are often sublime. Chocolat reminds you of life's simple pleasures and invites you to enjoy them. --Jeff Shannon

The drawback is you don't get the bonus discs of The Wizard of Oz (either one bonus disc or two, depending on which version you're interested in)--so if you really want the documentaries or the silent films, you'll want to stick with the individual releases. But this set does include the commentary tracks, cast profiles, and any other material that was on the movie discs of the Oz sets, or anything that was on the previous Goonies or Wonka releases. Best of all, The Wizard of Oz has the great remastered picture of the two previous releases. Charlie and the Chocolate Factory and its sequel, Charlie and the Great Glass Elevator, along with Roald Dahl's other tales for younger readers, make him a true star of children's literature. Dahl seems to know just how far to go with his oddball fantasies; in Charlie and the Chocolate Factory, for example, nasty Violet Beauregarde blows up into a blueberry from sneaking forbidden chewing gum, and bratty Augustus Gloop is carried away on the river of chocolate he wouldn't resist. In fact, all manner of disasters can happen to the most obnoxiously deserving of children because Dahl portrays each incident with such resourcefulness and humor.
Charlie and the Chocolate Factory is a singular delight, crammed with mad fantasy, childhood justice and revenge, and as much candy as you can eat. The book is also available in Spanish (Charlie y la Fabrica de Chocolate). (The suggested age range for this book is 9-12, but nobody this reviewer has met can resist it, including New York City bellhops, flight attendants, and grumpy teenagers.)

Back in 1991, when the first edition of Sauces was published, it's as though James Peterson said, "Okay, this is what we know so far. Where do you want to go from here?" The "what we know so far" part started with the Greeks and Romans, moved through the Middle Ages, into the Renaissance, through the 17th and 18th centuries, and right on into time as we know it, time that can be tasted in the sauce.
The "where do you want to go" part continues to evolve, as it always will, but remains just as evident in the way we sauce our creations, both elegant and fundamental. In the second edition of Sauces, released seven years after the first, the "we" has expanded beyond Frenchmen and their disciples, and now includes the broader range of flavors experienced by Italians as pasta sauces, as well as New World cooks and their counterparts in the Middle East and throughout greater Asia. The solid base from which all this grows, however, remains the lessons learned in the French kitchen--and a better kitchen for such lessons has never been developed.
To cook is one thing, to sauce another. The right sauce lifts the right dish to a wholly different plateau of dining than would be the case if the cook didn't bother. This can be a humble pasta sauce created as a perfect balance of ingredients on hand, or a carefully considered sauce the ingredients of which have been developed at the stove over days, not mere hours.
In the sauce can be seen the reflection of the cook. There is no room to hide. In the well-crafted sauce can be found the ultimate expression of simplicity, which leaves even less room to hide. It is James Peterson's great talent that he can draw the home cook and professional cook into his dialogue on sauces, and teach them both how to stay afloat in such shallow waters.
Peterson gives the reader--in close to 600 pages, mind you--the continuum on which sauces have been based in culinary history. He gives the reader the kitchen science that allows sauces to work. He gives the reader the techniques necessary to follow along where many a cook has already whisked up a splendid creation.
