Caribbean Ice Cream Pie
1 (7 ounce) package flaked coconut
1/2 gallon vanilla ice cream, divided in half and slightly softened
2 tablespoons rum
Few drops green food coloring
1/3 cup butter
1 (8 ounce) can crushed pineapple, drained
2 limes, grated, plus the juice
In large skillet, stir coconut in melted butter over medium-high heat until golden and toasty. Reserve 2 tablespoons for garnish. Press remainder into bottom and sides of 9-inch pie plate and chill.
Combine half of slightly softened ice cream with pineapple and rum; spread over crust, then freeze.
Stir grated peel, juice of limes and food coloring into remainder of ice cream. Mound on top of pineapple layer; sprinkle with coconut and freeze.
Makes 8 to 10 servings.

Pirates Of The Caribbean: The Curse Of The Black PearlView This Product at AmazonLoosely based on the popular Disney theme park audio-animatronic ride, one might expect a modicum of good-natured "Yo-ho-ho-ing"--or maybe a little rousing Korngold/Errol Flynn/
Captain Blood orchestral romanticism--here. Instead composer Klaus Badelt initially entices us with some sparing Celtic folk charm, then unleashes a furious broadside of symphonic and choral thunder to rival his ominous score for
K-19. The composer's fellow German mentor is an obvious influence throughout (the album is credited with a wink as "Score overproduced by Hans 'Long John' Zimmer") but Badelt brings his own muscular instincts to bear throughout. Perhaps shrewdly realizing that genre cliches are nothing if not for reinventing, Badelt delivers his rhythmically nervous Eurocentric sensibilities--sort of Holst duels Shostakovich on the Spanish Main--with the subtlety of a scorching cannonball. It's seasoned with a little romantic respite in the final act, if a bit gingerly, and could no doubt profit by some of Korngold's sparkling melodic verve. But it's a loud, unabashed Summer Blockbuster score at heart; alert the neighbors.

Pirates Of The Caribbean: At World's EndView This Product at AmazonThe music for this third chapter in the
Pirates of the Caribbean franchise is a traditional, efficient action score that, due to the film's setting, occasionally incorporates light Asian touches. The popularity of Hans "Long John" Zimmer (all the credits in the CD's liner notes include pirate-themed nicknames, like the roll call in a
Simpsons Halloween episode) isn't in doubt--he sure is one in-demand composer--but afficionados are divided about his artistic worth, and this score isn't about to reconcile them. Some think that Zimmer relies too much on his stable of composers and sticks to tried-and-true recipes; others admire his capacity to weave themes in and out of cues, creating a whole made of subtly interrelated parts.
At World's End feeds both camps: Seven of his collaborators are credited with writing "additional music," and the album feels by-the-numbers at times; but those inclined to listen very closely will be rewarded by the way Zimmer sneaks in bits of two main melodies (especially variations on the first track, a pirate theme titled "Hoist the Colours" and cowritten by director Gore Verbinski) throughout. The use of electronics is so light as to be almost undetectable, which will please fans of a more organic orchestral sound.

Jewels of the Caribbean Sea is actually much more than a showcase of Mother Nature's collection of precious art treasures. It is also a glimpse into the tireless struggle for life that makes the ocean depths shimmer and glitter so spectacularly.
As wondrously beautiful as they may be, coral reefs are also living factories, vast and nearly timeless. To pass through an undulating wall of thimble jellies and descend a few hundred feet down these fantastically colored cities of the sea is to descend through history. Here at the bottom, amidst both microscopic bacteria and mammoth manta rays, life is hard won. While vibrantly colored Caribbean reef squid participate in a ritualistic visual combat for mating rights, the battles of others aren't as aesthetically pleasing. Only the most wary survive. This is not to say, of course, that life here is entirely an every-man-(or fish)-for-himself affair. See for yourself the bizarre relationship between the pearl fish and the sea cucumber. Or, for a slightly less unmentionable example, take the Goby and the black grouper. What's a nutritious lunch for the tiny fish proves to also be some pleasant attention to the larger one's hygiene. Ultimately though, as above, so below. The Caribbean may be more exotic in many aspects, but where the beauty ultimately lies is in the will to live. --Bob Michaels

Barbossa (Geoffrey Rush), a mutineer desperate to reverse the curse that left him and his (literally) skeleton crew in a state of eternal, undead damnation. Director Gore Verbinski (
The Ring) repeats the redundant mayhem that marred his debut film Mouse Hunt, but with the writers of
Shrek he's made

WWE Divas - Postcard from the CaribbeanView This Product at AmazonThis tribute to five ladies of the World Wrestling Federation, feisty "sports entertainers" who aren't quite strippers but also aren't quite wrestlers, is inadvertently summed up in a taunt showcased in the video. One of the women takes note of the breast implants sported by another and sneers, "Too bad you can't get a brain enhancement." Okay, it's not exactly George Bernard Shaw, but fans of the WWF probably won't care. There are misguided and hapless attempts to provide thoughtful content in segments in which Ivory, the Kat, Terri Runnels, Tori, and Trish Stratus pontificate about their hopes and dreams, but much of the footage shot in the Caribbean plays like a slow motion wet T-shirt contest. Interspersed with footage of the ladies in outfits that are either minuscule or transparent are clips showing them in action at WWF events. In a spectacular backstage brawl, one of the ladies tortures another with a hot iron at the climax of a nasty catfight, but the girls are bubbly and upbeat and happily frolicking on the beach a few months later. It's the WWF, and things don't make a lot of sense. The whole point is simply to have outrageous characters (and their enhancements) on display. And displayed they are.

Pirates films, yet far darker in spots (and nearly three hours to boot). The action, largely revolving around a pirate alliance against the ruthless East India Trading Company, doesn't disappoint, though the violence is probably too harsh for young children. Through it all, the plucky cast (Keira Knightley, Orlando Bloom, Geoffrey Rush) are buffeted by battle, maelstroms, betrayal, treachery, a ferocious Caribbean weather goddess, and that gnarly voyage back from the world's end--but with their wit intact. As always, Johnny Depp's Jack Sparrow tosses off great lines ; he chastises "a woman scorned, like which hell hath no fury than!" He insults an opponent with a string of epithets, ending in "yeasty codpiece."!
In the previous Dead Man's Chest, Sparrow was killed--sent to Davy Jones' Locker. In the opening scenes, the viewer sees that death has not been kind to Sparrow--but that's not to say he hasn't found endless ways to amuse himself, cavorting with dozens of hallucinated versions of himself on the deck of the Black Pearl. But Sparrow is needed in this world, so a daring rescue brings him back. Keith Richards' much ballyhooed appearance as Jack's dad is little more than a cameo, though he does play a wistful guitar. But the action, as always, is more than satisfying, held together by Depp, who, outsmarting the far-better-armed British yet again, causes a bewigged commander to muse: "Do you think he plans it all out, or just makes it up as he goes along?" Pirates of the Caribbean: Dead Man's Chest
Take the first
Pirates of the Caribbean film, add a dash of 20,000 Leagues Under the Sea and a lot more rum. Shake well and you'll have something resembling
Dead Man's Chest, a bombastic sequel that's enjoyable as long as you don't think too hard about it. The film opens with the interrupted wedding of Will Turner (Orlando Bloom) and Elizabeth Swann (Keira Knightley), both of whom are arrested for aiding in the escape of Captain Jack Sparrow (Johnny Depp) in the first film. Their freedom can only be obtained by getting Captain Jack's compass, which is linked to a key that's linked to a chest belonging to Davy Jones, an undead pirate with a tentacle face and in possession of a lot of people's souls. If you're already confused, don't worry--plot is definitely not the strong suit of the franchise, as the film excels during its stunt pieces, which are impressively extravagant (in particular a three-way swordfight atop a mill wheel). It may help to know that
Dead Man's Chest was filmed simultaneously with some of
Pirates 3, so don't expect a complete resolution (think more
The Empire Strikes Back) or the movie will feel a lot longer than it really is. Bloom shows a tad bit more brawn this time around, but he's still every bit as pretty as the tomboyish Knightley. (Seriously, sometimes you think they could swap roles.) Bill Nighy (Love, Actually) weighs in as Davy Jones and Stellan Skarsgård appears as Will's undead father. But the film still belongs wholly to Depp, who in a reprise of his Oscar-nominated role gets all the belly laughs with a single widened eyeliner-ed gaze. He still runs like a cartoon hen and slurs like Keith Richards--and he's still one of the most fascinating movie characters in recent history. --
