Rose Sugar
This sugar is delicious sprinkled on fresh berries or used in shortbread cookies that call for confectioners' sugar. It is also wonderful in homemade lemonade.
1 cup tightly packed, unsprayed,
fragrant rose petals*
1 1/2 cups granulated sugar
Mix together rose petals and sugar in glass or stainless bowl. Cover bowl halfway with plastic wrap. Let stand 2 days in dry place, stirring every day.
Then toss, cover completely with plastic wrap and let stand 4 to 5 days longer or until petals and sugar are dry, stirring every day or so. If sugar has stuck to bottom of bowl, gently tap bowl on counter to loosen.
Process mixture in blender or odor-free coffee grinder in small batches until sugar is powdered and no bits or lumps remain. (If using blender, process sugar in about 3 batches. If sugar has a hard time getting going in blender, shake blender cup with lid on and blend on high. You may need to shake it a couple of times before it gets going.)
Place sugar in glass jar with tight-fitting lid and keep in cool dry place up to about 9 months. Yields about 1 1/2 cups.
* Be sure to use unsprayed rose petals and, after you rinse them, let the petals get thoroughly dry before you add them to the sugar. Old-fashioned and heirloom roses produce very fragrant blooms that will perfume the sugar best.

If time is the true test, then Guns N' Roses' Greatest Hits confirms that they really were one of the greatest rock & roll bands in the world. While, in retrospect, fellow graduates of the class of 1987 are about as cool as poodle perms and spandex, the L.A. bad boys still rock like gods. Listening to the sun-drenched chords of "Paradise City" and the ensuing stadium-sized swagger is enough to make wearing leather trousers and bandanas seem like a good idea. Of course, it helped that for them sex, drugs, and rock & roll was a way of life, not a fashion statement. As Axl Rose wails "I wanna watch you bleed" on "Welcome to the Jungle" like a chain-smoking lunatic possessed, it's hard not to believe he meant it. Yet equally, it was his surprisingly poetic nature that made genuinely touching love songs of "Patience" and "Sweet Child of Mine."
Though none of their subsequent albums matched the drug-crazed genius of Appetite for Destruction, they did, as the Greatest Hits reminds, have their moments. From the bloated Use Your Illusion I & II came ultimate rock ballads "Don't Cry" and "November Rain," along with the primal rage that was "You Could Be Mine." And while the covers of the The Spaghetti Incident? were largely forgettable, the fact that their final single was a seedy sneer through the Rolling Stones' "Sympathy for the Devil" seems spectacularly fitting. --Dan Gennoe

By any rational measure, Alan Parker's cinematic interpretation of Pink Floyd: The Wall is a glorious failure. Glorious because its imagery is hypnotically striking, frequently resonant, and superbly photographed by the gifted cinematographer Peter Biziou. And a failure because the entire exercise is hopelessly dour, loyal to the bleak themes and psychological torment of Roger Waters's great musical opus, and yet utterly devoid of the humor that Waters certainly found in his own material. Any attempt to visualize The Wall would be fraught with artistic danger, and Parker succumbs to his own self-importance, creating a film that's as fascinating as it is flawed.
The film is, for better and worse, the fruit of three artists in conflict--Parker indulging himself, and Waters in league with designer Gerald Scarfe, whose brilliant animated sequences suggest that he should have directed and animated this film in its entirety. Fortunately, this clash of talent and ego does not prevent The Wall from being a mesmerizing film. Boomtown Rats frontman Bob Geldof (in his screen debut) is a fine choice to play Waters's alter ego--an alienated, "comfortably numb" rock star whose psychosis manifests itself as an emotional (and symbolically physical) wall between himself and the cold, cruel world. Weaving Waters's autobiographical details into his own jumbled vision, Parker ultimately fails to combine a narrative thread with experimental structure. It's a rich, bizarre, and often astonishing film that will continue to draw a following, but the real source of genius remains the music of Roger Waters. --Jeff Shannon

Someone get Amy Adams on the Broadway stage, stat! She may not have the huge pipes that are supposed to be necessary for singers nowadays, but based on her sweet performance of three songs on this soundtrack, she gets a tune. Leaving aside High School Musical-style contemporary pop, Disney returns to its sources here, with a fairy tale set to a traditional-minded score by Alan Menken (The Little Mermaid, Beauty and the Beast, etc.). The first three songs are loving, well-crafted homages to Disney classics, such as Cinderella and Snow White; tellingly, the lovely "Happy Working Song" (with lyrics by Stephen "Wicked" Schwartz) sounds like it could have been lifted from any number of Disney movies--and that's meant as a compliment. Carrie Underwood brings us back into the 21st century with the single "Ever Ever After", which in comparison feels a bit more anonymous. Menken also supplies several instrumental cues, often reprising themes alluded to in the songs, and James Marsden wraps things up with a hilariously straight-faced version of "That's Amore." --Elisabeth Vincentelli

When New York theatrical producer Joseph Papp decided to bring Gilbert and Sullivan to Broadway, he added typically broad, bold strokes to make their singular operetta format meaningful to 1980s audiences. In The Pirates of Penzance, Papp had a story that offered a mixture of potential action and comedy that was less arcane than other G&S chestnuts, which Papp's production underlined by playing up its antic conflict between its hapless, titular pirates and the citizens of Penzance, the Cornish town targeted for plunder. Adding to the new production's mainstream allure was the theatrical debut for erstwhile country-rock siren Linda Ronstadt as the virginal Mabel, along with a plum role for another putative pop heartthrob, Rex Smith, as the "good" pirate, Frederic.
Naturally, such amendments piqued complaints from self-appointed G&S purists, for whom the duo's original satirical edge and theatrical innovation were obscured (if not ossified) by their canon's patina of respectability. Happily, for the rest of us, Papp's cheeky revisions are generally on the money, and this 1983 film version preserves them with unusual fidelity. Instead of opening up his production with location shooting or intricate editing, director Wilford Leach savors the artifice of its stage sets and hokey, colorful costuming, celebrating the genre's proud theatrical legacy.
The cast, meanwhile, tears into the farcical plot with elan, led by Kevin Kline as the Pirate King, a role perfect for his skill at lampooning masculine bravado (not to mention his underexposed, generally strong singing). Broadway veteran George Rose proves the very model of the modern Major-General Stanley, and Angela Lansbury, added to the film's cast for marquee value, again shows her mettle as the ditzy maid, Ruth. Ronstadt justifies Papp's gamble, having trained rigorously to meet Sullivan's acrobatic melodies--indeed, this project marked her commitment to grow beyond rock, confirmed with her subsequent exploration of classic pop with arranger-conductor Nelson Riddle. --Sam Sutherland

Rose water is a distillation of rose petals that has the intensely perfumy flavor and fragrance of its source. Rose water has been a popular flavoring for millennia in the cuisines of North Africa, Middle East, India and China. Morocco is especially know for its fields of roses that are used to produce some of the most fragrant rose water available - indeed most "French" rose water is produced in Morocco. As early as the third century essences were made from rose petals using fairly crude methods. It wasn't until the 10th century that Avicenna, an Arab physician of discovered how to extract the essential oil from the flowers, and invented rosewater proper. Its popularity with food quickly spread throughout Europe and made its way into sweet and savory dishes, many of which are still popular today. Rose water is known as Ma Ward in Morocco, and Mustapha's is produced from the finest source, rosebuds grown on the high central plains of the Dades Valley and then distilled near by in El Kelaa des Mgouna, and it is some of the most fragrant we've ever tasted. A few drops streaked through cream, crème fraîche, custards, creamed rice puddings, ice cream, baked semolina sweetmeats, fruit fools, sugar syrups and fruit salads, add an element of surprise.
