Food Colors

Red
1 cup beets, fresh or canned
Water to cover
2 teaspoons vinegar

Cover fresh beets with water and boil in an enamel or glass pan until barely done. Remove the beets and peel, slice, and chop them, reserving the juice. Return beets to the juice and soak them for 4 hours. Strain liquid and measure out 3/4 cup. Add the vinegar to the liquid. If using canned beets, strain out 3/4 cup of the liquid and add 2 teaspoons of vinegar.

1 cup cranberries
Water to cover

Cover cranberries with water and boil for 2 hours, mashing the cranberries as they soften. Strain liquid.

Yellow
Outer skins of 5 yellow onions
1 cup water

Boil the dark, dry outer skins of yellow onions in a covered glass or enamel pan for 10 minutes, or until the liquid is dark yellow. Strain the juice.

1 cup daffodil, acacia, or crocus blossoms
Water to cover

Cover blossoms with water in an enamel or glass pan, bring to a boil, and simmer, covered, for 2 hours. Strain liquid.

Blue
1/2 head red cabbage, chopped
1 cup water

Simmer the cabbage and water in a covered enamel or glass pan until the cabbage turns dark green and is just tender. Strain the juice, which will be blue.

1/2 cup blueberries, fresh or canned
Water to cover

For a darker shade of blue, cover the fresh blueberries with water and simmer for 30 minutes. Mash the berries and strain the juice. If using canned blueberries, strain the juice.

Purple
1/2 cup fresh-frozen blackberries

Allow the frozen blackberries to soften at room temperature for 30 minutes, then blend for 30 seconds.

Green
Outer skins of 5 red onions
1 cup water

Boil the outer skins of the onions in the water in a covered enamel or glass pan for 10 minutes. Strain the juice.

1 cup clean grass clippings, spinach, or moss
Water to cover

Cover the grass, spinach, or moss with water and boil in an enamel or glass pan for 1 minutes, and then simmer, covered, for 10 minutes. Strain the liquid.

Brown
1 cup coffee grounds or 10 tea bags
1 cup water

Cover coffee grounds with water or add tea bags to water. Simmer, uncovered, in an enamel or a glass pan for 30 minutes. Strain the liquid.

Hints: If you plan to use any of these colors on fabrics, you will have to boil the fabric in a fixer or mordant before adding the colors. You can use either 4 tablespoons of potassium alum mixed with 1 tablespoon cream of tartar, or 1 teaspoon of chrome mixed with 1 1/2 teaspoons cream of tartar. To apply mordant to fabric, dissolve the mordant you have chosen in 1 cup of water. Add this mixture to a large pot containing at least 1 gallon of water. Use the above measures of mordant for each 8 ounces of fiber. Add the fabric, making sure there is enough water to cover, and simmer for 1 to 4 hours, depending on the color intensity that you want to achieve. Turn off the heat and let the fabric rest for another 4 hours; rinse, and dry.

Try experimenting with flowers and leafy materials that you can boil for color. Small rocks, berries and twigs yield pretty colors.

Through Elmo's lively voiceover, we learn that by filling a glass with a paper towel, a bean, and some water you can grow a bean pod, which is just what Elmo does, along with interviewing a friendly cactus and showing us a homemade video of Stinky the Plant, back in his world. In Bananas Mr. Noodle's usual bumbling with the object in question (Is it a telephone? A horn? A pen?) is a barrel of laughs, and we meet Top Banana, a spectacles- and bow tie-clad chap who brings his breed's health benefits to light. Hair, the final segment, is especially enlightening because every manner of the curious stuff shows up for a brief but thoughtful examination. By tuning us in to the Hair Channel, which is featuring a cartoon called "The Kingdom Where Everybody Wore His Hair the Same Way," Elmo leads us to the truth about hair: kinky or straight, short or long, everybody's got it, and what a person chooses to do with it doesn't count for much. Director Brad Bird (The Incredibles) doesn't quite keep all his spinning plates in the air, but the gags are great and the animation amazingly expressive--Remy's shrugs and nods are nimbler than many flesh-and-blood actors can manage. Refreshingly, the movie's characters aren't celebrity-reliant, with the most recognizable voice coming from Peter O'Toole's snide food critic. (This fellow provides the film's sole sour note--an oddly pointed slap at critics, those craven souls who have done nothing but rave about Pixar's movies over the years.) Brad Bird's style is more quick-hit and less resonant than the approach of Pixar honcho John Lasseter, but it's hard to complain about a movie that cooks up such bountiful pleasure. --Robert Horton

Getting Started
The Cupcake Maker comes with four special cupcake mixes and frosting that are custom designed for use with this toy. The cake flavors include red velvet, chocolate, yellow, and cinnamon sugar; the frostings are chocolate, vanilla, strawberry, and cream cheese flavored. These easy-to-use mixes, which contain no wheat ingredients--a definite plus for the gluten-free crowd--and require only water as an added ingredient. (Allergy alert: the mix does contain powdered eggs and powdered milk.)

The toy comes with everything your child needs to mix, bake, and decorate the cupcakes: a tiny mixing bowl, measuring spoon, water dropper, and miniature spatula for mixing the batter and frosting; a microwaveable container for baking the cupcakes; and a cupcake frosting gadget with a shape reminiscent of a KitchenAid standing mixer. And everything your little chef needs to get started is packaged in chic, girl-pleasing, contemporary pastels.

Mix It Up
Simply mix the cake mix with water using the provided measuring spoons and water dropper to reach the desired consistency (we found that a pudding-like consistency gives the best results), pour the batter into the cupcake paper, and put it in the plastic "baking dish," bake it in the microwave for about 30 seconds, and--voila!--out comes a completely baked cupcake. Because the cupcakes get pretty hot, an adult should handle them until they're cool enough to handle.

In the meantime, the frosting can be mixed up in the same manner. Again, it took us a few tries to get the proper consistency: it's especially important for the frosting to be, as suggested, the consistency of firm cookie dough to work properly with the cupcake froster.

Time to Decorate
The cupcake froster comes with a frosting tube with a plunger and decorator-type tip. Scoop the frosting into the tube with the miniature spatula and place it in the machine. (This step can prove almost impossible if the frosting is too runny.) Place the cooled cupcake below and push down the lever. The frosting machine simultaneously spins the cupcake and pushes out the frosting to create a spiral shape. Kids can put the finishing touches on with the included sprinkles or, as the "shortcut" cards suggest, with cut-up fruit or candy (you'll want to stock up on these beforehand). The finished cupcake is smaller than a regular cupcake and a bit larger than your standard mini cupcake.

The Taste Test
The quick-and-easy baking and frosting mixes make for a fun and simple introduction to baking, especially for kids who haven't already started growing their "kitchen legs." Kid-sized cooking utensils makes it fun for kids to use, and are much easier to use than Mom and Dad's larger and heavier utensils.

The cupcakes themselves cook quickly in the microwave, making for a fast turnaround that won't try younger kids' patience; but they also, to be honest, don't quite have the taste as the home-made cup cakes that mom or grandma makes. But admittedly, this opinion is formed by an adult palate. For the kids that cook the cupcakes, they will be flavored with the sweetness of do-it-yourself pride.

Adults will need to make sure, however, that the kids don't start out with aspirations to the Martha Stewart-like decorating job pictured on the box: after multiple tests, we found that the cupcake froster simply does not turn out perfectly dainty frosting spirals. This might prove disappointing, so kids should be prepared to expect more realistic, charmingly handmade results. And your kids will be sure to have a lot more fun and confidence with their own creative decorating jobs.



Add water to cake mix with the provided spoons and water dropper.

Pour the batter in the dish, microwave, and--voila!--a cupcake!

Place the cooled cupcake below and start frosting.
