Country Ham
1 (14 pound) country ham
1 cup cheap vinegar
1 quart molasses or sorghum
1 cup powdered instant dry coffee
6 or 7 dozen whole cloves
Place the ham, skin side down, in a cooking utensil large enough so that you can completely cover the ham with water. Add the water and then add remaining ingredients. Bring to a boil, and then simmer 20 minutes to a pound. After cooking, allow the ham to cool overnight in the utensil and the liquid used in cooking.
When completely cool, remove from liquid, place on a section of newspaper, skin side down, and refrigerate for at least 24 hours. Trim most of the skin and fat from the ham, and it is ready to eat.

Based on the novel by Max Evans and directed by Stephen Frears, The Hi-Lo Country charted a long and circuitous route to the big screen, and the final result proves that the material posed a major--and perhaps insurmountable--challenge for screen adaptation. It's easy to see why this contemporary Western was once a coveted project of director Sam Peckinpah; its codes of honor, male bonding, and hardened morality would've played nicely into Peckinpah's artistic legacy. There are clear echoes of Peckinpah in the screenplay by Walon Green (who wrote The Wild Bunch), and while the movie is blessed by Woody Harrelson's vivid performance as a reckless latter-day cowboy, Frears fails to maintain a compelling tone and the rest of the cast nearly fades into the background.
Billy Crudup (Without Limits) plays Harrelson's best pal, just returned to New Mexico from service in World War II with hopes of starting a cattle ranch free from the greedy clutches of a local rancher (Sam Elliott) who dominates the town of Hi-Lo like a bootclad kingpin. Harrelson joins in the effort, but tensions rise when he connects with the sultry seductress (Patricia Arquette) with whom Crudup has fallen inexplicably in love. Harrelson has provoked others as well, and he seems primed for a fall, but The Hi-Lo Country is a film out of balance. Memorable moments are found in abundance, and the film's period detail is impeccable, but Crudup's character is so underwritten and underplayed that his role as narrator and ostensible hero has minimal dramatic impact. By the time fate deals its inevitable blow, it's too late to care. Frears has suffered from similar missteps before (remember Mary Reilly?), and The Hi-Lo Country leaves you wondering what Peckinpah might have done with the novel he so dearly admired. --Jeff Shannon

What time is it? Time for High School Musical 2, the sequel to the Disney Channel smash that aired on Aug. 17, 2007 and became the most-watched basic-cable show ever. School is out, and Troy (Zac Efron) and Gabriella (Vanessa Hudgens) are looking forward to a summer to remember, but Troy also needs to make bank so he can go to college. As it turns out, Sharpay (Ashley Tisdale), the self-proclaimed primo girl of East High, has her eye set on primo-boy Troy, and gets him a job at the country club her parents own. It looks great for Troy when Gabriella and the rest of the Wildcats are hired also, but when he gets preferential treatment from the club manager (Mark Taylor) and others, it puts all of his relationships in hot water.
Everyone's back from the original movie, including Zac's buddy Chad (Corbin Bleu), Sharpay's brother Ryan (Lucas Grabeel), and Gabriella's friend Taylor (Monique Coleman). And the songs on the hit soundtrack often parallel the originals and are just as catchy: the Troy-Gabriella duet ("You Are the Music in Me," which is later Sharpay-ized into a rock version), the sports-flavored hip-hop number ("I Don't Dance," but this time on the baseball diamond instead of the basketball court), the Gabriella lament ("Gotta Go My Own Way"), the climactic stage duet ("Everyday"), and the mass-ensemble closer ("All for One"). But the sequel doesn't just stick to the status quo. Other songs include a flashy opener ("What Time Is It"), Sharpay's poolside feature ("Fabulous"), a percussive ensemble number ("Work This Out"), and Zac's solo ("Bet On It"), and the dances are even bigger this time around, relentlessly high-energy and often spectacular. In addition, the "let's put on a show" angle ! is only a subplot and the romance is now front and center--which means High School Musical has lost a bit of its innocence. But it's still wholesome viewing for tweens of all ages. Sharp-eyed Disney Channel fans will spot Miley "Hannah Montana" Cyrus as an extra. --David Horiuchi

The extended-edition DVD adds one new scene, in which Sharpay and Ryan perform the Hawaiian-themed "Humuhumunukunukuapua'a," which not only is fun but adds a bit of character development for Ryan. This number (which was on the CD as a bonus track) is incorporated into the movie and also accessible from the bonus-features menu, along with a four-minute blooper reel and music videos for "You Are the Music in Me" (one U.S. version and a Mexican version with Paulina Holguin and Roger) and "Gotta Go My Own Way (Canadian versions in French and English, both with Nikki Yanofsky). A "dance rehearsal cam" shows the choreographers and cast working on nine numbers (36 minutes total). Director-choreographer Kenny Ortega coaches, offers pep talk, and declares, "If it wasn't for Annette Funicello and Frankie Avalon, we wouldn't be here!" There are two sing-along options, one with English subtitles and a "karaoke" version with English subtitles but no vocals. --David Horiuchi

Christmas in Connecticut is a holiday film that plays 365 days of the year. Barbara Stanwyck gives a brilliant, sardonic performance as Elizabeth Lane, a columnist for Smart Housekeeping magazine, whose enticing descriptions of the exquisite meals she prepares for her husband and baby on their bucolic Connecticut farm earns her fame as "America's Best Cook." A writer, she is; a cook, she is not. As she types the words, "From my living room window, as I write, the good cedar logs cracking on the fire..." the view is of clothes flapping on the line outside her bachelorette Manhattan apartment. An able supporting cast keeps her lie on life support: her editor, her stuffy and detestable architect suitor, and the wonderful "Uncle" Felix (S.Z. Sakall), an English-garbling Hungarian chef who provides the recipes that fill her column.
Cut to Jefferson Jones, a sailor adrift at sea for weeks after his destroyer is torpedoed. Memories of the food described in Lane's columns are central to his survival. After his rescue, as he's recuperating in a naval hospital, a marriage-minded nurse thinks she might nudge Jones to the altar if he could only experience a real domestic Christmas. And it just so happens that she was nurse to the grandchild of Alexander Yardley, the wealthy and powerful publisher of --you guessed it--Smart Housekeeping magazine. And so, she pens the letter that could unravel Lane's carefully constructed fraud. She writes to Yardley asking that Jones be included in America's ultimate Christmas--the one to be held at the Lane family farm in Connecticut. The pompous Yardley (ably portrayed by Sidney Greenstreet) believes the Lane myth and instantly sniffs a story that will send his magazine's circulation skyrocketing. And staring down a lonely holiday, he decides to join the Lanes for Christmas on the farm, too. Now, all Lane has to do is come up with a farm. And a husband. And let's not forget the baby. In 1884, Swiss cutler Karl Elsener set up shop in Ibach-Schwyz, installing a waterwheel in Tobelbach Brook to run his grinding and polishing machines.
