Botsford Inn Honey Baked Ham with Cumberland Sauce
Source: Botsford Inn, Farmington, Michigan
Serves 8.
1 whole or half ham
2 cups pineapple juice
1 cup honey
1 cup brown sugar
1 quart hot water
1 cup currants
Thinly peeled rind of 1 orange
Thinly peeled rind of 1 lemon
1/3 cup cornstarch dissolved in 1/2 cup water
1/2 cup packed brown sugar
Juice of 1 orange
Juice of 1 lemon
1/3 cup red currant jelly
1/4 cup port wine
Black cherries, if desired
Place ham in large roasting pan and pour pineapple juice and honey over top. Sprinkle with brown sugar. Bake at 325 degrees F for two hours.
Meanwhile, to make sauce: In large saucepan, pour hot water over currants and let stand until plumped, about 20 minutes.
Cut orange and lemon rinds into very fine julienne about 3/4 inch long; poach in simmering water 20 minutes. Drain, discarding water, and set aside.
Stir cornstarch mixture into currants and water; cook, stirring constantly, over medium heat until sauce has thickened and become transparent. Add brown sugar, orange and lemon juice, jelly and wine; stir until jelly is melted and add prepared orange and lemon rinds and black cherries.
Serve warm over ham slices.
Makes about 5 cups of sauce.

At first reluctantly and then audaciously, Doolittle becomes privy to his predicament and essential to his escape while delivering a steady stream of ribald one-liners and witty slapstick—whether it's her Mick Jagger impersonation, police station meltdown, or infamous dress-caught-in-the-paper-shredder escapade at the British Consulate ball. A host of supporting talent includes Annie Potts, Jon Lovitz, Jim Belushi, the late Phil Hartman, and Stephen Collins (who shines as Marty, the mole), yet the film belongs to Whoopi. Though the plot is far-fetched and often flimsy, Penny Marshall (in her directorial debut) gives Goldberg enough latitude to showcase her immense talent in a role she obviously relishes—and audiences will too. Roy Scheider plays a Manhattan psychologist, Sam Rice, who is dragged into a murder investigation when one of his patients is killed. The prime suspect is played by Meryl Streep, then at the height of her stardom (the film was released within a week of Streep's triumphant Sophie's Choice in 1982). Rice understandably lets his basic instincts take over and falls for this brisk, blond mystery woman, though he can't help wondering whether she will kiss him or kill him. The movie may be chilly, but it's well executed, with all-cool style and Hitchcockian angles. Benton gets good work from an expert supporting cast, including Jessica Tandy as Rice's mother, who's also a shrink. --Robert Horton

Robert Redford, usually a pretty good judge of material, got snookered badly in this Ivan Reitman comedy that also starred Debra Winger and Daryl Hannah. Redford is a rising assistant D.A. who is prosecuting a woman (Hannah) for theft of a painting by her father. Before he knows what hit him, he's involved romantically both with the defendant and with her scattered lawyer (Winger). Redford is as good as he can be, given the circumstances, but this is a movie that doesn't know where it's going. Originally intended as a serious film about the legal wrangling over the estate of the late Mark Rothko, this film quickly degenerated when the script was turned over to Jim Cash and Jack Epps Jr., whose sparkling oeuvre includes Turner and Hooch. --Marshall Fine
