Chocolate Spiderweb Snaps
Makes 72.
1 1/4 cups shortening
2 cups granulated sugar
4 ounces unsweetened chocolate, melted
2 eggs
1/3 cup light corn syrup
2 1/2 tablespoons water
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup semisweet chocolate chips
Frosting
6 cups sifted confectioners' sugar
6 tablespoons warm water
Paste food coloring
Cream shortening. Gradually add sugar, beating at medium speed of an electric mixer until light and fluffy. Add melted chocolate, eggs, corn syrup, water and vanilla extract. Mix well.
Combine flour, baking soda, and salt. Add to creamed mixture, beating just until blended. Shape dough into two 12-inch rolls. Wrap in wax paper. Chill several hours.
Unwrap rolls, and cut into 1/4-inch slices. Place on ungreased cookie sheets. Bake at 350 degrees F for 10 to 12 minutes. Cool on cookie sheets 5 minutes. Remove to wire racks to cool completely.
Spread frosting over cookies to within 1/8 inch of edge. Let stand until frosting sets.
Place chocolate morsels in top of a double boiler; bring water to a boil. Reduce heat to low. Cook until chocolate melts. Let stand until almost cool but not set. Spoon melted chocolate into decorating bag fitted with metal tip No. 2. For round pattern, pipe chocolate in 5 or 6 circles around top of cookie. Pull the point of a wooden pick across chocolate circles from the center to the outer edge. Repeat 8 or 10 times, spacing evenly across top of cookie. For linear pattern, pipe chocolate in parallel lines, about 1/4-inch apart, across top of cookie. Pull the point of a wooden pick diagonally across lines. Let stand at room temperature until chocolate is firm.
Frosting: Mix enough confectioners' sugar and enough water to make frosting a spreading consistency, stirring well. Color as desired with a very small amount of past food coloring.
NOTE: Dough may be frozen up to 3 months. Slice dough while frozen, and bake as directed.

It's the reinterpretations that are riskier. While Paul Westerberg's stripped-down, nasal reading of "Nowhere Man" perceptively underscores Lennon's inherent Dylan fetish and Howie Day turns "Help!" from anxious plea to desperate dirge, Grandaddy smugly alt-rocks the energy right out of "Revolution." The Beatles hardly need anyone to burnish their reputation, but this album goes a long way toward underscoring their most undersung legacy as rock's most transcendent melting pot. -Jerry McCulley

The film's quotient of magic realism feels a little stock, but the story line is good and Arau's affinity for the sensuality of food (and of nature) is sublime. Charlie and the Chocolate Factory and its sequel, Charlie and the Great Glass Elevator, along with Roald Dahl's other tales for younger readers, make him a true star of children's literature. Dahl seems to know just how far to go with his oddball fantasies; in Charlie and the Chocolate Factory, for example, nasty Violet Beauregarde blows up into a blueberry from sneaking forbidden chewing gum, and bratty Augustus Gloop is carried away on the river of chocolate he wouldn't resist. In fact, all manner of disasters can happen to the most obnoxiously deserving of children because Dahl portrays each incident with such resourcefulness and humor.
Charlie and the Chocolate Factory is a singular delight, crammed with mad fantasy, childhood justice and revenge, and as much candy as you can eat. (The suggested age range for this book is 9-12, but nobody this reviewer has met can resist it, including New York City bellhops, flight attendants, and grumpy teenagers.)

Back in 1991, when the first edition of Sauces was published, it's as though James Peterson said, "Okay, this is what we know so far. Where do you want to go from here?" The "what we know so far" part started with the Greeks and Romans, moved through the Middle Ages, into the Renaissance, through the 17th and 18th centuries, and right on into time as we know it, time that can be tasted in the sauce.
The "where do you want to go" part continues to evolve, as it always will, but remains just as evident in the way we sauce our creations, both elegant and fundamental. In the second edition of Sauces, released seven years after the first, the "we" has expanded beyond Frenchmen and their disciples, and now includes the broader range of flavors experienced by Italians as pasta sauces, as well as New World cooks and their counterparts in the Middle East and throughout greater Asia. The solid base from which all this grows, however, remains the lessons learned in the French kitchen--and a better kitchen for such lessons has never been developed.
To cook is one thing, to sauce another. The right sauce lifts the right dish to a wholly different plateau of dining than would be the case if the cook didn't bother. This can be a humble pasta sauce created as a perfect balance of ingredients on hand, or a carefully considered sauce the ingredients of which have been developed at the stove over days, not mere hours.
In the sauce can be seen the reflection of the cook. There is no room to hide. In the well-crafted sauce can be found the ultimate expression of simplicity, which leaves even less room to hide. It is James Peterson's great talent that he can draw the home cook and professional cook into his dialogue on sauces, and teach them both how to stay afloat in such shallow waters.
Peterson gives the reader--in close to 600 pages, mind you--the continuum on which sauces have been based in culinary history. He gives the reader the kitchen science that allows sauces to work. He gives the reader the techniques necessary to follow along where many a cook has already whisked up a splendid creation. But most of all, he gives the reader permission to go ahead and be creative, to cut loose with knowledge and technique in hand and discover for oneself the way an inkling of a flavor idea can find its way to a dish and make the combined ingredients lift off the plate. Or not. Finding out what doesn't work can be just as important.
This is a book that can be taken to bed and savored, page by page, sauce by sauce. It is a book that should be on the shelf in any kitchen, professional or homebody alike. It is not a book to ever gather dust and need dusting. --Schuyler Ingle
