Shish Kebab
This is a recipe from St. George Antiochian Orthodox Church, Phoenix, Arizona. It is a cross-cultural Arabic church which celebrated its 10th annual International Food Festival in February 1998.
3 pounds boneless leg of lamb or
3 pounds top sirloin of beef
2 teaspoons allspice
3 tablespoons lemon juice
1/4 cup olive oil
2 tablespoons Worcestershire sauce
1/2 cup chopped parsley
1 cup finely minced onion
2 cloves garlic, crushed
Cut meat into 1-inch cubes. Place in a bowl and add the remaining ingredients. Turn meat to coat. Refrigerate several hours or overnight, turning occasionally.
When ready to grill, skewer meat. Grill over hot coals 10 to 20 minutes until cooked to desired stage.
Makes 6 to 8 servings.

Coated with a nonstick finish, this shish kabob frame with skewers cooks kabobs in two different ways. Both slots and holes line each side of the frame. The quickest cooking method is to load the six 13-1/2-inch skewers with chunks of meat and/or vegetables, and lay them on top of the frame in the designated slots. The second method is to insert a skewer part-way into a hole on the side, push it through the desired chunks of food, then insert the pointed tip into the hole across the frame. This blend includes spices, herbs and peppers needed to prepare Sheesh Kebabs To prepare Sheesh Kebabs youll need: 2lb minced lamb. 1 large onion chopped. 2in piece ginger chopped. 2 garlic cloves crushed. 1 green chilli chopped. 2 tbsp chopped fresh coriander. 1 beaten egg. 1 tbsp natural yogurt. 1 tbsp oil. 3 TBSP of Kebab Spice Mix. Put all ingredients except the yogurt and oil, into a food processor or blender and process until the mixture binds together. Spoon into a bowl and leave to marinate for 1 hour. Divide the mixture into 8 equal portions with lightly floured hands and mould into sausage shapes, thread onto skewers and chill. Brush the kebabs lightly with the yogurt and oil, and cook under a hot grill for 8-10 mins, turning occasionally, until brown all over.
