Korean Barbecued Short Ribs

4 pounds meaty beef short ribs
3 tablespoons granulated sugar
1/4 cup sesame oil
1/2 cup soy sauce
1 tablespoon cider vinegar
2 scallions and tops, minced
2 cloves garlic, minced
1 tablespoon finely minced fresh ginger root
1 teaspoon dried red pepper flakes
1/4 cup sesame seeds
1 tablespoon flour

Make deep cuts in the meat between the ribs so the meat will absorb the marinade. Rub meat well with the sugar and sesame oil and let sit for 30 minutes.

Combine remaining ingredients; pour over ribs, and let stand for 1 hour.

Bake or barbecue, turning and basting frequently with marinade, for 20 to 30 minutes or until meat is cooked.

For the Perfect Kim Chee at home - Fill a large container (pot, pan, etc.) with 1 gallon of water. Add 1 cup salt. Cut cabbage 1 1/2 inch by 2 inch in size. Place all of the cut cabbage into the container of water. Using a large, heavy dinner plate, keep the cabbage submerged under water for at least 8 hours. After this period, rinse the cabbage in tap water and drain in colander. Next, empty 1 package of NOH Korean Kim Chee Mix into the large container. Add 1/2 cup of water and mix well. Add the cabbage and mix thoroughly. After mixing, place cabbage in a quart-size container (ie. jar with a lid). Press the cabbage down firmly, allowing 1/4 space at the top. Close the lid and allow to stand for 1 day (unrefrigerated). This will develop the full flavor. Makes two (2) quarts of very spicy kim chee. Refrigerate.

These 24 first-season episodes--bracingly less politically correct than the shows in the final seasons--chart the program's sometimes bumpy evolution as it tried to remain true to the film's anarchic spirit while finding its own voice. The most memorable episodes include "The Pilot," which establishes the characters in broad strokes; "Sometimes You Hear the Bullet," in which a friend of Hawkeye's (Alan Alda) dies on the operating table (look for "Ronny" Howard as an underage soldier); "Cowboy," in which someone is trying to kill clueless commander Henry Blake (McLean Stevenson); and the pivotal "Dear Dad," the first of what would be a series of multistory episodes in which Hawkeye writes to his father about life at the 4077th. It is interesting to note film characters who made early exits from the series, including Timothy Brown's Spearchucker and Karen Philipp's Lt. Dish (George Morgan, who plays Father Mulcahy in the pilot, we hardly knew ye). Klinger (Jamie Farr), bucking for his Section 8 discharge, doesn't appear until the fifth episode, "Chief Surgeon Who?" And Gary Burghoff's Radar is a much more wily and savvy partner in crime to "Yankee Doodle Doctors" Hawkeye and Trapper John (Wayne Rogers) than in later seasons. In its 11-year run, M*A*S*H earned 14 Emmy Awards, and it remains one of TV's most beloved series. Though it is a staple of syndication, the episodes are presented here uncut, probably for the first time since their original broadcast. M*A*S*H experienced no sophomore slump from its Emmy Award-winning first season. It continued to subvert sitcom convention with multiple-story episodes such as "Radar's Report." Scenes in the operating room play without a laugh track (this DVD gives viewers the option of watching entire episodes minus the intrusive chuckles and guffaws). M*A*S*H also tackled such issues as racism ("Dear Dad... Three," "L.I.P.--Local Indigenous Personnel"), homophobia ("George"), and war atrocities (Hawkeye and Trapper try to get the Army to take responsibility for the accidental shelling of a South Korean village). Not that M*A*S*H forgot how to be funny. "Five O'Clock Charlie" and "For Want of a Boot" are strictly for laughs. Hawkeye and Hot Lips memorably exchange flu shots in "Carry On, Hawkeye." Loyal viewers will note the emergence of several supporting characters, including Jamie Farr's Klinger and William Christopher's Father Mulcahy. One also sees the (to some) unfortunate transformation of Gary Burghoff's savvy, crackerjack clerk Radar into a naïve innocent. Allan Arbus makes his first appearance as compassionate psychiatrist Dr. Sidney Friedman in "Radar's Report." In the realm of revenge thrillers, you'd be hard pressed to find more ultra-violent vengeance and psycho thrills than in the creepy story of Oldboy. This Korean import made a pop splash at the Cannes Film Festival and during its limited theatrical run thanks to the imprimatur of Quentin Tarantino, who raved about it and its visionary director, Chan-wook Park, to anyone who would listen. It's easy to see why QT fell in love with the grindhouse attitude, fast-paced action, violent imagery, and icy-black humor, but it's a disservice to think of Oldboy as another Tarantino homage or knockoff. The darkly existential undercurrent in the themes that Oldboy traces over its life-long narrative arc is much more complex and deeply disturbing than anything of its kind. The movie's tagline is, "15 years of imprisonment... 5 days of vengeance." The imprisonee is Oh Dae-Su, an ordinary Joe who is snatched off a Seoul street corner and locked away in a dank, windowless fleabag hotel room for the aforementioned 15 years. Just as abruptly he is released, and thus the five days begin. Why did this happen to Oh Dae-Su? Ah, but that would be telling, and in fact we don't know ourselves until the final wrenching scenes.

Oldboy breaks into a classic three-act saga, the first of which details the hallucinatory period of imprisonment in which Oh Dae-Su wades from mild insanity to outright psychosis in the hands of unseen yet attentive captors. Act 2 is the revenge, when an entirely different tone takes over and Oh Dae-Su moves with single-minded purpose and clarity. It's this section that has gained the most notoriety, primarily for the claw-hammer dentistry scene, the one-man-army tracking shot, and the wriggling octopus that Oh Dae-Su consumes in a sushi bar (he's been dead so long he simply needs life back inside him in any way possible). In act 3, answers finally start to emerge and the sinister atmosphere grows even more profound--not without a healthy dose of extra bloodletting, of course. Oldboy is an undeniably poetic masterpiece of tension, fury, and dynamic craft. Ultimately, its epic cycle of tragedy is of the sort that mankind has been inflicting upon itself for all time. Some of the images may be gruesome, but all converge into a kind of beauty. It's in the telling of this lurid tale that these details become one and the memories of pain ultimately heal. --Ted Fry

Legendary for his work ethic, his kindness to young writers, and his unbending moral spine, Halberstam had friends and admirers throughout journalism, many of whom spoke at his memorial service and at readings across the country for the release of The Coldest Winter. How It Began
January 1950 Secretary of State Dean Acheson leaves Korea out of America's Far East Defense Perimeter.
June 25, 1950 The North Korean Army crosses the 38th parallel with a force of about 135,000 troops. The Republic of Korea is taken completely by surprise by the invasion and their forces are soon in full retreat.
July 7, 1950 General Douglas MacArthur is officially put in command of the forces set to defend the Republic of Korea.
August 1950 Relentlessly focused attacks by the North Koreans drive the ill-prepared defense forces into the country's southeast corner. The Pusan Perimeter is established as the last best hope of maintaining a toehold on the peninsula.
August-Sept. 1950 The North Koreans launch assault after assault against the Pusan Perimeter, with particularly brutal fighting taking place along the Naktong River. U.S. soldiers are in constant danger of being overrun.
September 15, 1950 MacArthur delivers his masterstroke with the amphibious landings at Inchon. The invasion blindsides the North Korean defenders and relieves pressure on the Pusan Perimeter. UN forces are able to drive north from Pusan and east from Inchon. By the end of September the North Korean forces are routed on all fronts, Seoul has been recaptured, and MacArthur receives permission to cross the 38th parallel.
The Debacle
November 1950 U.S. soldiers march deep into North Korean territory, eventually reaching the Yalu River border with China. But the first warning of a conflict with the Chinese takes place at Unsan, where the Eighth Cavalry is mauled by a surprise engagement. By the end of November Chinese Communist forces mount a major offensive at Kunuri and the Chosin Reservoir.
December 1950 Overwhelmed by hundreds of thousands of Chinese soldiers, UN forces are battered to positions below the 38th parallel. General Walker is killed in an accident, and General Ridgway takes over his command. General MacArthur lobbies relentlessly for attacks into China, an action that would draw China, and likely the USSR, into a full-scale war. Tensions between Truman and MacArthur escalate.
January-February 1951 The Chinese reach the high-water mark of their assault. General Ridgway aggressively combats the Chinese in the fight for the central corridor, with major battles fought at Wonju, Twin Tunnels, and Chipyongni.
April 11, 1951 Truman relieves General MacArthur of his duties. Raucous public outcry in support of the celebrated general further erodes Truman's popularity.
The End
July 27, 1953 After years of bloody stalemate, a cease-fire is signed between North Korea and the UN. The border established is very close to the original line at the 38th parallel. It is estimated that the war cost 33,000 American, 415,000 South Korean, and up to 1.5 million Chinese and North Korean lives. In the arena of U.S. foreign policy, the lessons of Korea still largely remain unlearned.
