Tex-Mex Chili Gravy
4 dried red New Mexico chiles*
8 dried red ancho chiles*
1 pound ground beef
4 cups beef stock
1 medium onion, finely chopped
2 garlic cloves, minced
2 tablespoons bacon drippings (optional)
2 teaspoons cumin seeds, toasted and ground
1/2 teaspoon Mexican oregano
1/2 teaspoon salt
1 tablespoon Masa Harina®
* To shortcut, use about 1/2 cup Gebhardt chili powder and reduce the cumin and oregano by half.
If using the shortcut, skip this step. Preheat the oven to 300 degrees F. Break off the stems of the chile pods and discard the seeds. Place the pods in a single layer on a baking sheet and roast them for about 5 minutes. Watch the pods closely so that they do not scorch. Break each chile into several pieces. In a blender, purée the pods with the stock. You should be able to see tiny pieces of chile pulp, but they should be bound in a smooth, thick liquid. Set the purée aside.
In a medium saucepan, brown the meat with the onion and garlic. Drain the grease. Add bacon drippings, if desired, and return the pan to the heat. When the bacon drippings have melted, add the cumin, oregano, salt and puréed chiles or chili powder and beef stock. Simmer the mixture for about 50 minutes, until the meat is tender and the liquid has thickened slightly.
In a small bowl, mix the Masa Harina® with 2 tablespoons of the cooking liquid, and stir the mixture back into the gravy. Simmer the gravy for an additional 10 minutes.
Serve with Tex-Mex enchiladas, tamales or other dishes.

Texican Style, a 96-minute concert recorded before a huge, wildly enthusiastic audience in the Texas state capitol in March, 2004. And the brothers Garza do it with what remains rock & roll's most basic and reliable format: the rock guitar trio. True, there's nothing earth-shatteringly original going on here; guitarist Henry, like many others from Texas and everywhere else, is channeling Jimi Hendrix via Stevie Ray Vaughan, with a little Carlos Santana on the side (Jojo is the outstanding bassist, while Ringo--his real name, by the way--plays drums, of course). But Los Lonely Boys bring something else to the party: good singing (all three are capable lead and harmony vocalists), and enough other influences, from Tex-Mex to the Beatles, to forge a distinctive, melodically appealing sound. Their songs, notwithstanding the obvious influences, offer enough variety to keep things interesting, from the epic (nearly 15 minutes) "Onda" to the swinging little diversion "Supper Time," along with plenty of straight blues (like "Man to Beat," with its stone Stevie Ray minor groove) and some Los Lobos-style rock. Still in their twenties, Los Lonely Boys' future is bright--and their present ain't bad, either.

Es admirable que el grupo tenga un sonido que los caracteriza, pero eso no quiere decir que deban hacer el mismo disco una y otra vez. Si Los Lonely Boys se aventuraran a tocar otros géneros seguramente sorprenderÃan como lo hicieron cuando salieron originalmente. Es un disco muy olvidable.

But this debut CD by the San Angelo, Texas band Los Lonely Boys might herald a changing of the guard. This is truly a band of brothers, led by guitarist/vocalist Henry Garza and his younger, bass-and-drum-playing siblings Jojo and Ringo. Like a lot of groups, they had to move away to achieve fame--in their case, to Nashville. But after the release of their EP, Willie Nelson heard them, put them on tour as his opening act, and recorded them at his studio. Stylistically, the Garza brothers' bilingual songs about love and life combine Stevie Ray Vaughan blues, Santana-style guitar licks and R&B. Nelson helps out on guitar, with Reese Wynans on keyboards. Produced by Keb Mo and B.B. King producer John Porter, the music is honest, driving, and down home, especially on the organ-filled uptempo tracks "Senorita" and "Tell Me Why." The stinging guitar solo on the Afro-anthemic "Onda" recalls the '70s grooves Santana built his chops on, while "The Answer" and "More than Love" are raw power ballads that show off this group's dynamism and diversity.
