Buckwheat Dumplings
2 cups pure buckwheat flour
4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup milk
1 egg
3 tablespoons vegetable oil or melted shortening
Combine first 4 ingredients; sift into bowl. Combine milk, egg and oil or melted shortening; beat. Add to dry ingredients; stir just until dry ingredients are moistened. Drop tablespoonsful of mixture into simmering stew. Cover pan tightly; cook until done, about 15 minutes, without lifting cover.

Buckwheat (Fagopyrum Esculentum) Flour is made of finely ground Buckwheat groats. Buckwheat Flour carries a strong flavor and is low in gluten. Buckwheat is not technically a grain but an annual, related to rhubarb. Hulled Buckwheat is cream-colored and becomes brown only when toasted. These groats are small and angular shaped. When roasted, this grain is called "Kasha" (Kah-sha). Buckwheat is rich in amino acids and is considered the heartiest grain, although it is not as easy to digest as other grains. Buckwheat groats have a walnut, cocoa flavor. They have been an important food source, in a variety of forms, since 10th century BC. It is is native to central Asia and was introduced to Europe at the end of the middle ages.
