Pasta Antipasto Salad

This salad is very good. I adapted this recipe from one by JoAnna Lund.

1 cup fat-free Italian salad dressing, divided
1 cup mushrooms, sliced
1/2 cup ripe olives, chopped
1 cup green pepper, chopped
4 cups rotini, cooked and drained
2 cups tomatoes, chopped
1 (3.5 ounce) package turkey salami, sliced
3/4 cup reduced-fat mozzarella cheese, shredded
1 cup artichoke hearts, drained and cut in half

Mix 3/4 cup Italian dressing with mushrooms, olives, and peppers. Add tomatoes, salami, cheese, and artichoke hearts. Mix well to combine. Refrigerate at least 30 minutes.

Add 1/4 cup remaining dressing. Stir and serve.

Description: "This hearty salad tastes so good, no one knows that it's reduced fat and calorie."

Serving Ideas : A nice summer luncheon dish. Serve on a bed of lettuce, with crusty bread.

    Everyday Pasta Recipe Preview

    Rigatoni with Sausage, Peppers, and Onions

    4 to 6 servings
    Stroll through any Italian American street fair and you'll smell this classic combo. But while sausage and peppers are great in a sandwich, I think they're even better tossed with rigatoni. Using turkey sausages instead of the more traditional pork also makes it a little lighter.

    1/4 cup extra virgin olive oil
    1 pound sweet Italian turkey sausages
    2 red bell peppers, cored, seeded, and sliced
    2 yellow onions, sliced
    1 teaspoon salt
    1 teaspoon freshly ground black pepper
    4 garlic cloves, chopped
    1/2 teaspoon dried oregano
    1/2 cup chopped fresh basil
    2 tablespoons tomato paste
    1 cup Marsala wine
    1 (14.5 ounce) can diced tomatoes, with juice
    1/4 teaspoon crushed red pepper flakes (optional)
    1 pound rigatoni pasta
    Freshly grated Parmesan cheese, for garnish

    Heat the oil in a large, heavy skillet over medium heat. Add the sausages and cook until brown on all sides, 7 to 10 minutes. Remove the sausages from the pan.

    Keeping the pan over medium heat, add the bell peppers, onions, salt, and pepper and cook until golden, 5 minutes. Add the garlic, oregano, and basil and cook for 2 minutes. Add the tomato paste and stir until incorporated, then add the Marsala, tomatoes with their juice, and red pepper flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the brown bits. Bring to a simmer.

    Cut the sausages into 4 to 6 pieces each. Return the sausages to the pan. Simmer uncovered until the sauce has thickened, about 20 minutes.

    While the sauce simmers, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain the pasta and add to the thickened sauce; toss to combine. Spoon into individual bowls and sprinkle each serving with Parmesan cheese.




  • Sauces: Classical and Contemporary Sauce Making

    Back in 1991, when the first edition of Sauces was published, it's as though James Peterson said, "Okay, this is what we know so far. Where do you want to go from here?" The "what we know so far" part started with the Greeks and Romans, moved through the Middle Ages, into the Renaissance, through the 17th and 18th centuries, and right on into time as we know it, time that can be tasted in the sauce.

    The "where do you want to go" part continues to evolve, as it always will, but remains just as evident in the way we sauce our creations, both elegant and fundamental. In the second edition of Sauces, released seven years after the first, the "we" has expanded beyond Frenchmen and their disciples, and now includes the broader range of flavors experienced by Italians as pasta sauces, as well as New World cooks and their counterparts in the Middle East and throughout greater Asia. The solid base from which all this grows, however, remains the lessons learned in the French kitchen--and a better kitchen for such lessons has never been developed.

    To cook is one thing, to sauce another. The right sauce lifts the right dish to a wholly different plateau of dining than would be the case if the cook didn't bother. This can be a humble pasta sauce created as a perfect balance of ingredients on hand, or a carefully considered sauce the ingredients of which have been developed at the stove over days, not mere hours.

    In the sauce can be seen the reflection of the cook. There is no room to hide. In the well-crafted sauce can be found the ultimate expression of simplicity, which leaves even less room to hide. It is James Peterson's great talent that he can draw the home cook and professional cook into his dialogue on sauces, and teach them both how to stay afloat in such shallow waters.

    Peterson gives the reader--in close to 600 pages, mind you--the continuum on which sauces have been based in culinary history. He gives the reader the kitchen science that allows sauces to work. He gives the reader the techniques necessary to follow along where many a cook has already whisked up a splendid creation. But most of all, he gives the reader permission to go ahead and be creative, to cut loose with knowledge and technique in hand and discover for oneself the way an inkling of a flavor idea can find its way to a dish and make the combined ingredients lift off the plate. Or not. Finding out what doesn't work can be just as important.

    This is a book that can be taken to bed and savored, page by page, sauce by sauce. It is a book that should be on the shelf in any kitchen, professional or homebody alike. It is not a book to ever gather dust and need dusting. --Schuyler Ingle

    Anthony Bourdain is host of the Discovery Channel's No Reservations, executive chef at Les Halles in Manhattan, and author of the bestselling and groundbreaking Kitchen Confidential, Anthony Bourdain's Les Halles Cookbook, A Cook's Tour, Bone in the Throat, and many others. His latest book, The Nasty Bits will be released on May 16, 2006.

    Heat is a remarkable work on a number of fronts--and for a number of reasons. First, watching the author, an untrained, inexperienced and middle-aged desk jockey slowly transform into not just a useful line cook--but an extraordinarily knowledgable one is pure pleasure. That he chooses to do so primarily in the notoriously difficult, cramped kitchens of New York's three star Babbo provides further sado-masochistic fun. Buford not only accurately and hilariously describes the painfully acquired techniques of the professional cook (and his own humiations), but chronicles as well the mental changes--the "kitchen awareness" and peculiar world view necessary to the kitchen dweller. By end of book, he's even talking like a line cook.

    Secondly, the book is a long overdue portrait of the real Mario Batali and of the real Marco Pierre White--two complicated and brilliant chefs whose coverage in the press--while appropriately fawning--has never described them in their fully debauched, delightful glory. Buford has--for the first time--managed to explain White's peculiar--almost freakish brilliance--while humanizing a man known for terrorizing cooks, customers (and Batali). As for Mario--he is finally revealed for the Falstaffian, larger than life, mercurial, frighteningly intelligent chef/enterpreneur he really is. No small accomplishment. Other cooks, chefs, butchers, artisans and restaurant lifers are described with similar insight.

    Thirdly, Heat reveals a dead-on understanding--rare among non-chef writers--of the pleasures of "making" food; the real human cost, the real requirements and the real adrenelin-rush-inducing pleasures of cranking out hundreds of high quality meals. One is left with a truly unique appreciation of not only what is truly good about food--but as importantly, who cooks--and why. I can't think of another book which takes such an unsparing, uncompromising and ultimately thrilling look at the quest for culinary excellence. Heat brims with fascinating observations on cooking, incredible characters, useful discourse and argument-ending arcania. I read my copy and immediately started reading it again. It's going right in between Orwell's Down and Out in Paris and London and Zola's The Belly of Paris on my bookshelf. --Anthony Bourdain

    How long will the food last?
    Most products have a 3-5 year shelf life under proper conditions. Products containing shrimp, tuna, brown rice, nuts, and dairy products have a shelf life of one to two years.

    What are proper storage conditions?
    The best is a cool, dry environment for our products. The cooler the better. High heat that occurs in a garage or the trunk of a car is not good for these products.

    How does AlpineAire Foods extend the shelf life of food?
    By using freeze-dried and dehydrated ingredients, most of the water is removed from the item. Each product contains an oxygen absorber, which is iron oxide pellets. Iron oxide attacks the head-space oxygen remaining in the pouch once the pouch has been sealed. Oxygen has moisture so the absorber collects the oxygen and thus slows down the oxidation process that can occur. Oxidation leads to rancidity.

    Is the oxygen absorber harmful?
    No, it is not harmful, but do not use it as a spice packet. It tastes awful.

    What is freeze drying?
    Freeze drying is a process used for instant or quick rehydration of certain dried foods. The first step in freeze drying is to rapidly freeze the food. The water content, now frozen, is turned directly into a gas and withdrawn from the food during the next steps, vacuum and low-heat, thus avoiding the shrinkage. Many of AlpineAire's products are custom freeze dried to suit strict quality requirements. Freeze-dried products include grains, beans, fruits, meats, seafood, pastas, vegetables, and eggs. Using this process, 98% of the moisture is removed.

    What is dehydration?
    The standard method of dehydrating vegetables and spices is to place the items on a conveyor belt and run them through an oven at a high temperature for a relatively short time. About 90 to 95% of the moisture is removed.

    Some vegetables are more suited to this form of drying than others. This means that with the addition of water, the product rehydrates back to its original state more easily. Preferable items include: onions, bell peppers, tomatoes, celery, carrots and mushrooms. Dehydrated items such as peas, corn, and green beans do not rehydrate as well as freeze-dried.
