Éclair Dessert
Source: Taste of Home Country Cooking Collection, Vol. 1, 2000
4 gallons prepared vanilla pudding
4 (16 ounce) cartons containers frozen whipped topping, thawed
6 pounds graham crackers
Icing
5 cups confectioners' sugar
1/3 cup corn syrup
1/4 cup cutter or margarine, softened
1/4 cup baking cocoa
3 tablespoons vegetable oil
1/4 to 1/2 cup milk
In a large container, mix pudding and whipped topping; set aside.
Place one third of the graham crackers side by side in bottoms of about twelve 13 x 9 x 2-inch baking pans. Pour about 2 inches pudding mixture over crackers. Add another layer of crackers and pudding. Top with remaining crackers. Cover and refrigerate overnight.
For icing, combine confectioners' sugar, corn syrup, butter, baking cocoa and oil in a mixing bowl. Beat until smooth, adding enough milk to achieve spreading consistency. Spread on top of crackers' chill until serving.
Makes 140 servings.

"Illuminations of the Beyond" (it's better in English--in French it sounds too much like a pastry) was Olivier Messiaen's last completed work; it's a masterpiece to rank with his other multimovement orchestral extravaganzas: Turangalila Symphony, From the Canyons to the Stars, and The Transfiguration of Our Lord Jesus Christ. The music is dazzling in its variety, from the composer's famous birdsong concoctions, to music of truly transcendental beauty. If you enjoy any of his other works, you'll want to hear this, and if you don't know his music, this is also a good place to start. The performance is excellent, and so is the sound. --David Hurwitz
Olivier Messiaen: Éclairs sur l'Au-delà View This Product at Amazon
Éclairs sur l'au-dela (Illuminations of the Beyond) was Messiaen's last work. It shares with his other large-scale orchestral pieces a sense of otherworldly grandeur, obsessively repeated rhythmic and melodic patterns, birdcalls, and a riot of orchestral color, among much else. Its eleven movements address different aspects of the title and, like virtually everything Messiaen wrote, could not be mistaken for any other composer. Rattle and the Berlin Orchestra deliver a skilled, dynamic rendition, steering clear of the kitschy implications of sections where Messiaen skirts the edges of kitsch (enjoyable as they may be). Unexpectedly, the Berliners sound at home in this music, with some terrific solo and section contributions, and special kudos due to the percussionists and winds, especially the flutes, whose birdcalls resound throughout the work. Transparent engineering uncovers details in the score, further making this a delight for Messiaen fans. --Dan Davis

Janvier is shot in the chest while keeping watch outside Mlle. Clément's boarding house waiting for the return of Emile Paulus, a young man who lived there, suspected of having robbed a bar. A boarder, MlleBlanche Dubut, mentions to M the occasional strange condition of the blinds in the house opposite, where Mme Francoise Boursicault, the invalid wife of a ship's purser lives, and M goes to interview her. He realizes that the person who shot Janvier was apparently someone who came to visit her from time to time, and forces the issue, eventually discovering that Julien Foucrier, her lover from long ago, who had fled France twenty years earlier to escape apprehension for a robbery-murder he had committed, had returned to France, and was her visitor. He had shot Janvier to flee the apartment before the return of her husband, wrongly assuming that the watch in the street was for him. He turns himself in after M agrees to keep the woman's connection to the affair a secret.
