Hillbilly Chili
1 pound lean ground beef
Salt and pepper, to taste
4 cans tomatoes, crushed
4 cans pinto beans
1 envelope chili seasoning
Chili powder, to taste
Jalapeño pepper juice, to taste
1 to 2 tablespoons vinegar
Brown ground beef in large saucepan, stirring until crumbly; drain. Season with salt and pepper. Add tomatoes and beans. Cook over medium heat until bubbly. Add chili seasoning, chili powder, and pepper juice. Simmer, covered, for 30 minutes.
Stir in vinegar to bring out the flavor of the spices just before serving.

The Beverly Hillbillies, but it was the ultimate "People's Choice." It was TV's top-rated show its first two years, and ran for nine seasons. At the heart of its success was that the Clampetts were not the objects of ridicule. As in classic Depression-era screwball comedies, it was the rich who were mostly made to look foolish and no match for the Clampetts' plain-spoken common sense and traditional mountain ways. In one episode, the Clampetts transform snobby Mrs. Drysdale's boring garden party into a wild success, thanks to some bluegrass music and spiked punch. This season does contain "The Giant Jackrabbit," which, if not the series' funniest half hour (Granny is bedevilled by a wayward kangaroo), was certainly its highest rated and is reportedly among the 20 top-rated TV episodes of all time. Memorable guest stars include Henry Gibson as Granny's favorite TV cowboy, who is revealed to be a faker, and bluegrass legends Flatt & Scruggs, who can be heard in each episode performing the TV theme song that even those who have never watched the show can probably recite. Hillbilly Deluxe is musically consistent, Tony Brown's production sharp and focused throughout, the themes here revert to the same old same old: empty, shallow stompers with lyrics that occasionally sound dated. "Play Something Country," another Ronnie Dunn collaboration with Terry McBride, duly name-drops current Nashville stars as well as P. Diddy and Patsy Cline. Things don't improve with the blustery "She Likes to Get Out of Town"; "Just Another Neon Night," with its painfully clichéd line "turn off that rap, boys, play me some Haggard"; or "Building Bridges," a "vocal event" with superfluous input from Vince Gill and Sheryl Crow. Only the moving story-song "Believe," brimming with heart and honesty, reminds of their potential when they think beyond the boot.
