South Seas Wings
3 pounds chicken wings
1 cup soy sauce
1 cup brown sugar, packed
1/2 cup butter
1 teaspoon dry mustard
3/4 cup water
Disjoint the chicken wings, discarding the tips.
Combine the soy sauce, brown sugar, butter or margarine, mustard and water and heat until the sugar and butter dissolve. Let mixture cool and pour over wings. Marinate in the refrigerator for 2 hours, turning occasionally.
Preheat oven to 350 degrees F.
Bake chicken wings in marinade for 45 minutes, turning once and spooning marinade over chicken occasionally. Drain on paper towels and serve.

Ludacris is gearing up for a multi-tiered and mutli-faceted plan to introduce his newest release to his fans. There are plans to rollout consecutive new singles and videos leading up to the November 25th release of THEATER OF THE MIND, the most important album ever recorded by Disturbing Tha Peace CEO and DTP/Def Jam recording artist Ludacris.
The unprecedented schedule got underway last week (Oct. 14th) when the song "Undisputed," went up on iTunes, followed this week by the premiere of the video for "Undisputed," which co-stars boxing champion Floyd "Money" Mayweather. On October 20th, the second new single "One More Drink" co-starring T-Pain impacted radio formats, in advance of going up on iTunes. In between, on Oct. 23rd, Ludacris will perform on the annual syndicated BET's Hip Hop Awards '08 and on October 24th, Ludacris will perform on MTV's Veteran's concert live from Nokia Theater. The "One More Drink" video premiere will then take place on Election Day, Nov. 4th.
One week later (Nov. 11th, Veteran's Day) comes the third new single. The final element, a video podcast on Nov. 18th (details to be announced in the weeks ahead) sets the stage for the eagerly anticipated arrival of THEATER OF THE MIND in the physical and digital marketplace on Nov. 25th.
In between this mind-boggling schedule he has been busy continuing to build on his career as an actor. The new action film Max Payne, based on the popular video game, opened in the # 1 box office spot raking in over 18 million dollars in its weekend debut. Chris Bridges aka Ludacris stars as an internal affairs agent alongside Mark Wahlberg, Mila Kunis and Beau Bridges. Also on the movie front, after a successful limited release in NY, Toronto, LA and the UK (in which it debuted at #1 as well the 1st weekend) RocknRolla, written and directed by Guy Ritchie, will be released throughout the rest of the U.S on October 31st. Chris joins an ensemble cast including Gerard Butler, Thandie Newton, Idris Elba and Oscar nominee Tom Wilkinson for an exciting tale of the Russian mob setting up shop in London.
THEATER OF THE MIND is the long-awaited follow-up to Luda's RIAA platinum Release Therapy (released Sept. 2006), which debuted at #1 on first week sales of 309,000 copies - the same week that its first single, "Money Maker" (featuring Pharrell Williams) hit #1 on the Billboard Hot 100 and R&B charts, Luda's first #1 hit in six years. A rare RIAA platinum single, "Money Maker" was followed at #1 by "Runaway Love" (featuring Mary J. Blige), whose video directed by Chaka Zulu/Jessy Terrero dealt with the issues facing runaway and homeless youth. Luda and Mary J. performed the song live with special guests Earth, Wind & Fire at the 49th annual Grammy Awards worldwide telecast - where Release Therapy won for Best Rap Album. "Runaway Love" went on to win Best Collaboration at the BET Awards '07.
2006 was a landmark year for Chris `Ludacris' Bridges. In addition to the success of Release Therapy - his follow-up to 2004's double-platinum The Red Light District - he also scored rave reviews for his star appearance in Law & Order: Special Victims Unit, the show's highest rated episode ever. His role in the critically acclaimed film, Crash (which opened May 2005) began to reap honors in 2006, including landing Bridges the SAG Award for Best Ensemble, the Critics Choice Awards for Best Ensemble, and the NAACP Image Award for Outstanding Supporter Actor in A Motion Picture.
He teamed up again with Terrence Howard for John Singleton's critically acclaimed Sundance discovery Hustle & Flow. Ludacris also began hosting his own XM satellite radio show, Disturbing Tha Peace Presents Ludacris' Open Mic. Filming also took place in London for Fred Claus - in which "Fred Claus, Santa's bitter older brother, is forced to move to the North Pole" - starring Vince Vaughn and Paul Giamatti, with Chris cast as `the DJ Elf' with issues. Same goes for the numbing epic "No Jesus Christ" and the closer, "Waste." Throughout, the band shows a lack of imagination that may ultimately prove fatal. If you've sought out the video because of a sentimental devotion to the musical the title tune is taken from, Song of the South, then you're bound to be disappointed. Disney's undying efforts to make nice have spilled into this segment (the first of a nine-song package), and all is sanitized so that the original film's disconcerting depictions of then-de rigueur racial inequality cause no modern-day discomfort. But that's not to say the scene of Uncle Remis strolling a hummingbird- and butterfly-lined road and singing his song isn't a sure-fire mood-lifter, or that it doesn't succeed in its mission, which is to jog joyful childhood memories. And it is the only way to see any of the film on video; Disney has no plans to ever release the controversial film. In fact each of this collection's numbers (all ingrained collectively on a generation now raising its own kids), aims to knead adult viewers' nostalgic sides (presumably part of a strategy to perpetuate Disney die-hards). Especially effective are Cinderella's "Bibbidi-Bobbidi-Boo," the Davy Crockett series' "The Ballad of Davy Crockett," and Snow White's "Whistle While You Work." --Tammy La Gorce

The dazzling Rodgers and Hammerstein musical, brought to lush life by the director of the original stage version, Joshua Logan. Set on a remote island during the Second World War, South Pacific tracks two parallel romances: one between a Navy nurse (Mitzi Gaynor) "as corny as Kansas in August" and a wealthy French plantation owner (Rossano Brazzi), the other between a young American officer (John Kerr) and a native girl (France Nuyen). The theme of interracial love was still daring in 1958, and so was director Logan's decision to overlay emotional moments with tinted filters--a technique that misfires as often as it hits. The comic relief tends to fall flat, and an overly spunky Mitzi Gaynor is a poor substitute for the stage original's Mary Martin. But the location scenery on the Hawaiian island of Kauai is gorgeous, and the songs are among the finest in the American musical catalog: "Some Enchanted Evening," "Younger than Springtime," "I'm Gonna Wash That Man Right Outta My Hair," "This Nearly Was Mine." That's Juanita Hall as the sly native trader Bloody Mary, singing the haunting tune that launched a thousand tiki bars, "Bali H'ai." Author Elyne Mitchell's book, The Silver Brumby, on which this movie is based, is about a magnificent silver stallion, Thowra. The story opens on a dark and stormy night in the high country. Elyne (Caroline Goodall), spins a tale to comfort her daughter, Indi (Ami Daemion). The beautiful mare, Bell-Bell, gives birth to Thowra, an exceptional cream-colored foal, with a mane and tail that gleam silver in the moonlight. We see Thowra grow up through several seasons. Winter has its hardships; the herds of horses find survival difficult in the snow-packed mountains. But summer may be even more dangerous, for that's when men return to the high country to try to catch the brumbies and cruelly break them of their wildness. For one man (called simply "The Man" in Elyne's story), capturing Thowra, now king of all the brumbies, becomes an obsession. The Man is played by Russell Crowe, whose usual fine acting is enhanced here by impressive horsemanship. The struggle between Thowra and The Man takes on mythic proportions, building to a haunting climax. Gorgeous footage of wild horses running and rearing in the mountains make this the perfect movie for horse-lovers of all ages. We come to care deeply about the fate of these splendid creatures, whose wisdom and passion are rivaled only by their beauty. --Laura Mirsky

The Disney Channel Original Movie High School Musical is a combination of backstage action and Grease without the unwholesome habits. Scoring record ratings at the time of its January 2006 broadcast, it's a smash hit with tween audiences (ages 6 to 10), but appealing for all ages. At a New Year's Eve party, Troy (Zac Efron of the WB's Summerland) has a chance meeting with Gabriella (Vanessa Anne Hudgens) when they share a karaoke song. Lo and behold, when school resumes, they discover that Gabriella has just transferred to Troy's East High School, a campus divided into tight cliques of jocks, cheerleaders, brainiacs, and skater dudes. Eager to recapture the magic they'd discovered during karaoke, Troy and Gabriella consider auditioning for the school's upcoming musical, much to the dismay of the school's frost queen/theater goddess, Sharpay (Ashley Tisdale of The Suite Life of Zack and Cody). Problem is, Troy is also the star of the basketball team and Gabrielle is being recruited to compete in the Scholastic Decathlon. Will they give up their cliques to start something new, or will they do as the show's first big anthem urges and "Stick to the Status Quo"? Well, this is a Disney movie, so maybe the sacrifices won't be that hard, and even the hints of romance are mild.
The bestselling soundtrack is catchy in that Disney-pop kind of way, mixing in a dash of hip-hop ("Getcha Head in the Game," punctuated by squeaky basketball shoes and other sound effects), salsa ("Bop to the Top"), and the endearingly hammy ("What I've Been Looking For" performed by Sharpay and her brother, Ryan, played by Lucas Grabeel). It's not hard to imagine High School Musical becoming a semi-staple for high school groups to perform themselves. DVD bonus features include sing-along subtitles; a 9-minute featurette discussing casting, recording sessions, and rehearsals; a multi-angle look at a rehearsal of "Bop to the Top"; and music videos for "We're All in This Together" and a song that didn't make it into the final film, "I Can't Take My Eyes Off of You," performed by Efron, Hudgens, Tisdale, and Gabreel. --David Horiuchi

Dr. Agatston Answers Frequently Asked Questions about South Beach Dieting
I'm doing so well on Phase 1. Why can't I stay on it indefinitely?
There are two types of people on the South Beach Diet: those who cannot wait to start Phase 2 and those who never want to see Phase 1 end.
Why are some people so enamored with Phase 1? The reason is that it's simple and to the point. You don't have to do a lot of thinking about food choices. You're basically eating lean protein, high-fiber legumes, low-fat dairy, good fats (including some nuts), and plenty of vegetables. Those highly processed refined carbs that were your downfall are out of sight and, within a few days, out of mind (at least for most people). You're encouraged to eat until you're full and snack before you get hungry. And every time you step on the scale, you get a big grin on your face because those unwanted pounds and fat are just melting away. So it's not surprising to me that Phase 1 fans often ask, "If I'm doing so well on Phase 1, why do I have to move on to Phase 2?" Phase 1 is not meant to be a long-term eating plan. Its dual goals are to jump-start weight loss for people who have 10 or more pounds to lose (thus providing immediate positive reinforcement) and to control swings in blood sugar and eliminate cravings for sugar and refined starches. Phase 1 can also have a positive effect on sugar in people with pre-diabetes. In just 2 weeks, you should have achieved these two goals and be ready to move on.
Once your sugar and cravings are under control, there's a key reason to go on to Phase 2: we don't want you to miss out on the myriad vitamins, minerals, and other nutrients that come from reintroducing whole fruits and whole grains to your diet, not to mention the added fiber. These foods contain thousands of phytochemicals that protect your body against a host of diseases, including heart disease and cancer. If you were to continue indefinitely on Phase 1 and deny yourself these foods, you would not be learning how to make good food choices in the real world. More importantly, you'd be missing out on some of the best medicine nature has to offer.
In addition, if you were to continue with the smaller palette of foods recommended on Phase 1, your diet would get dull over the long haul. And once you're bored, you're much more likely to revert to your old eating habits. For the diet to truly become a lifestyle--one that allows you to sustain weight loss and garner all the related health benefits--there has to be variety and satisfaction in your eating plan. That's another reason why we move you on to Phase 2 so quickly.
Remember, it may take you longer to lose weight by following the three phases of our diet. But the chances of keeping that weight off are far better.
Can I still eat as much protein now that I'm eating more carbohydrates on Phase 2?
As you know, on the South Beach Diet, we don't expect you to count grams of protein or weigh your food on any phase. Now that you're gradually adding satisfying high-fiber whole grains and fruits to your diet on Phase 2, you'll naturally be less hungry, and the amount of lean protein you require to feel full will no doubt be less than you were eating on Phase 1. That said, I encourage you to eat some protein--fish or shellfish, lean beef or pork, white meat chicken or turkey, or soy protein, for example--along with these good carbs at most meals.
Protein helps slow down the digestion of carbohydrates, which means that your body will make less insulin, your sugar swings will be reduced, and you won't crave more food in between meals. I also urge you to eat slowly, savor your food, and really enjoy the variety of foods you'll introduce on Phase 2. If you do this, your focus will no longer be on how much protein you can have because you'll never be hungry. Another tip: Once you're satisfied, push your chair away from the table. It's fine to leave some food on your plate at the end of a meal.
Can I really eat anything I want on Phase 3?
If you're talking about dessert as an occasional treat, of course. On Phase 3, we don't regulate what you can eat. Yes, you can finally have that small bowl of ice cream or a small piece of chocolate cake or the white bagel that you couldn't have before. But you shouldn't do it too often, and you should continue to watch amounts on desserts. Phase 3 isn't about abandoning the good principles of the diet and suddenly resuming your old eating habits. It's about continuing to make smart, healthy food choices--for life. If you follow the principles of the diet most of the time, we expect you to enjoy anything you want now and then.
