Spanish Chicken 'n' Rice

2 pounds skinless, boneless chicken thighs
2 tablespoons vegetable oil
2 (14 1/2 ounce) cans Mexican-style stewed tomatoes
1 cup water
1 1/2 cups long grain rice
4 teaspoons instant chicken bouillon granules
1 tablespoon chili powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/2 cup sliced ripe and/or pimento-stuffed green olives
1/2 cup shredded Cheddar cheese

Cut chicken pieces in half lengthwise where the bone was removed. In a 12-inch skillet, cook chicken in hot oil until brown on both sides. Remove from skillet; set aside.

Meanwhile, combine tomatoes, water, rice, bouillon granules, chili powder, cinnamon and cumin in a large saucepan. Bring to boiling. Turn rice mixture into a 13 x 9 x 2-inch baking dish. Arrange chicken on top. Cover dish tightly with aluminum foil. Bake at 350 degrees F for 55 to 60 minutes or until chicken and rice are tender. Sprinkle with olives and cheese. Bake, uncovered, 5 minutes longer.

The little hero finds his way into the "circle of life" with some new friends and eventually comes back to reclaim his proper place. However, All About My Mother approaches its twists and turns with a broader emotional scope than most of Almodóvar's work; even the more extravagant aspects of the story are presented quietly, to allow the sadness of life to be as present as the irrepressible vitality of the characters. Almodóvar embraces pettiness, jealousy, and grief as much as kindness, courage, and outrageousness, and the movie is the richer for it. --Bret Fetzer

Vantage Point, which aspires to be a cunningly twisted thriller, comes equipped with plenty of hurtling action, handheld camerawork, what-was-that? editing, and a plot that has multiple, contradictory agendas writhing like a nest of snakes. It's all set a-boil within a few blocks of a town square in Spain where a U.S. President is targeted for assassination. Although the movie lasts 90 minutes, the events it depicts are mostly over with in a quarter-hour or so--but seen, rewound, and reseen from half a dozen different (you guessed it) vantage points. The first line in the credits reads "Original Film," apparently the name of the production company. "Gimmick Movie" would be more accurate; the opening reel, effectively jolting, affords an initial overview of the events through the eyes, lenses, monitors, and dueling sensibilities of a TV news producer (Sigourney Weaver), her activist-minded reporter (Zoe Saldana) and crew. Everybody's in Salamanca (actually, Mexico City) for the start of an international conference to reaffirm Arab-Western commitment to the fight against terrorism. Terrorism, of course, sees this as an ideal moment to break out. As gunshots and explosions reduce everything to chaos, the clock is reset to zero and we proceed to revisit the scene as experienced by several Secret Service agents (namely Dennis Quaid and Matthew Fox), an American tourist with camcorder (Forest Whitaker), sundry locals--including three who may be caught up in a love triangle or a conspiracy or both--and even the President himself (William Hurt).

For a while, this is mildly diverting: that guy, or that gesture, so sinister when glimpsed across the plaza in one run-through, now appears harmless in close-up--or vice versa. But there's no real ambiguity (so stop with the careless comparisons to Kurosawa's Rashomon)--this is a shell game in which the peas aren't worth tracking. Despite decent actors, the characters might as well be holograms (although poor Forest Whitaker is saddled with "motivation" of surpassing sappiness), and the casting telegraphs several twists: one redoubtable good guy practically gives a wink-wink, nudge-nudge that he's really bad, etc. The movie declines to specify which nutjob philosophy the terrorists espouse, and their numbers are multi-ethnic. There's also a laborious suggestion that they have bloodthirsty, reactionary counterparts among the President's inner circle, which perhaps qualifies as redeeming socio-political comment and prompts a meaningless declaration of deep meaning from the Prez. The whole megilleh finally comes down to an extended car chase through impassably claustrophobic streets that would mark a lurch into unintentional self-parody--if only that point hadn't been passed a couple of rewinds earlier. --Richard T. Expect to be very hungry (and perhaps amorous) after watching this contemporary classic in the small genre of food movies that includes Babette's Feast and Big Night. Director Alfonso Arau (A Walk in the Clouds), adapting a novel by his former wife, Laura Esquivel, tells the story of a young woman (Lumi Cavazos) who learns to suppress her passions under the eye of a stern mother, but channels them into her cooking. The result is a steady stream of cuisine so delicious as to be an almost erotic experience for those lucky enough to have a bite. The film's quotient of magic realism feels a little stock, but the story line is good and Arau's affinity for the sensuality of food (and of nature) is sublime. You might want to rush off to a good Mexican restaurant afterward, but that's a good thing. --Tom Keogh

As with saffron, pimenton releases its flavor when heated. Sprinkled over a colorless dish, the pimenton will liven up the color without changing the flavor. Adding to a cooking recipe, the flavor will be released to infuse the dish with complex flavors.
One important note: The sugar content of pimenton is very high, thus you must be cautious not to overcook the spice or it will burn. Add to a cooking dish only when liquids are present, and then keep a watchful eye if using high heat.
