Louis Armstrong's Ham Hocks and Red Beans
Source: A Date with a Dish, a Cookbook of American Negro Recipes by Freda DeKnight, New York: Hermitage Press, Inc, 1948
Serves 6.
1 pound dried red beans water
1 pound ham hock
1 bay leaf
1 pod red pepper
Salt and pepper to taste
1 onion, diced
1 pod garlic, minced
Wash beans and soak two to three hours or overnight if preferred.
When ready to cook, drain off water and put beans in large pot with two quarts cold water. Let water heat thoroughly, then add ham hocks, herbs, onion and garlic. Cook slowly but steadily at least two hours or until tender enough to mash easily.
When done, place in a dish and lay ham hocks on top. May be served with rice.

A tale about a fatherless boy finding dramatically different father figures throughout a remarkable adventure, Treasure Island is an entertaining coming-of-age story, with themes of family, loyalty, friendship, trust, and honesty at its core. While Robert Louis Stevenson's classic adventure tale is popular film fare, it's never been done this well. Charlton Heston stars as Long John Silver and Christian Bale as plucky Jim Hawkins in this TNT production. Directed by Heston's son Fraser (who also directed the excellent family fare Alaska), the film remains faithful to the novel, and draws much of the spirit and excitement of the book. The action scenes are first-rate, and if the ship Hispaniola has never looked better or more authentic, no surprise: the ship is the original from 1962's Mutiny on the Bounty. The opening scenes are dark and rich, as they capture the period well, with careful attention to makeup (the teeth, the body grime!) and costuming. Oliver Reed and Christopher Lee are frighteningly effective as Capt. Billy Bones and Blind Pew, and the film's first half-hour is theirs. The tone shifts and lightens when Heston appears as the legendary pirate. Look for Pete Postlethwaite, Julian Glover, and Richard Johnson in wonderful supporting roles. The film marks Bale's segue from poignantly promising child actor (Empire of the Sun) to compelling teen (he would later continue to prove his talent as a versatile young actor in Little Women and Velvet Goldmine). --N.F. Chazz Palminteri wrote the script for this excellent story of an Italian American boy (Lillo Brancato) who grows up in the 1960s caught between the strong influences of his blue-collar, straight- arrow father (Robert De Niro) and a Mafia chieftain (Palminteri) who is his all-purpose mentor. De Niro makes his directorial debut with this production and, except for a little stiffness, does very well by the characters and their world. The story does not go precisely where one might expect it to go: Palminteri knows better than to force the central figure to choose between the two most important men in his life, and he doesn't fill time with stock drama about crime or family conflict. Joe Pesci makes an extremely effective and uncredited appearance at the end as a man who doesn't have to do more than speak softly to communicate how dangerous he is. --Tom Keogh

Edward Norton takes up where Eric Bana left off in Lee's version, playing Bruce (that's the character's original name) Banner, a haunted scientist always on the move. Working in a bottling plant and communicating via email with an unidentified professor who thinks he can help, Banner goes postal when General Thaddeus "Thunderbolt" Ross and a small army turn up to grab him. Intent on developing whatever causes Banner's metamorphoses into a weapon, Ross brings along a quietly der! anged soldier named Emil Blonsky (Tim Roth), who wants Ross to turn him into a supersoldier who can take on the Hulk. The adventure spreads to the U.S., where Banner hooks up with his old lover (and Ross' daughter), Betty (Liv Tyler), and where the Hulk takes on several armed assaults, including one in a pretty unusual location: a college campus. The film's action is impressive, though the computer-generated creature is disappointingly cartoonish, and a second monster turning up late in the movie looks even cheesier. Norton is largely wasted in the film--he's essentially a bridge between sequences where he disappears and the Hulk rampages around. I would like to take a few minutes to share with you how The Word of Promise came to be. As a young man, I was introduced to and intrigued by recordings of old radio shows. Long before the advent of TV, people were entertained by radio mysteries, comedies and dramas. These stories were presented by actors, complete with sound effects and music enhancing the experience. The imagination, which we have all but forgotten today, was totally engaged.
While in college, I started a company to market these audio gems of the past. In only a few years, Radio Spirits became the largest seller and marketer of classic radio shows in the world.
Then during the filming of Mel Gibson's The Passion of the Christ I visited the set in Rome. Seeing first hand what Mel was creating, and encountering his vision for the film, made a profound and lasting impression on me.
One night, over two years ago, while reading to my children from the Bible, the vision of a dramatized version of the Bible began to take shape in my heart. Why not engage the powerful medium of audio to impact lives with the Word of God as the radio shows from yesterday impacted me as a child? We could reach more people.
Only a few years later and by the profound grace of God, the combined efforts of an incredibly talented group of artisans have brought forth an audio New Testament that I believe will stand the test of time. I've never been more excited or passionate about a project and I want to thank God and everyone who has touched this in their own unique way...especially you. Savor these eternal words "which will not pass away" and may many blessings be yours as a result.
