Dinah Shore's Zucchini Stuffed Chicken
8 to 10 chicken pieces (with skin on)
2 zucchini, washed and shredded
4 cups bread, shredded
2 eggs, beaten
2 tablespoons chicken seasonings (pepper,
salt, garlic powder, onion powder)*
1 large onion
1 to 2 cup water
* 2 tablespoons combined spices.
Wash and clean chicken.
Mix all stuffing ingredients except water. Add water, a little at a time, until mixture is soft but of a fairly firm consistency. Place 2 to 3 tablespoons of mixture under the skin of each chicken piece and place on baking tray. Bake at 375 degrees F for 40 to 50 minutes. Drain off fat and serve.

Originally set to Debussy's "Claire de Lune," "Blue Bayou" remains an atmospheric evocation of the Everglades. "The Whale Who Wanted to Sing at the Met" is a charming fantasy about a cetacean with an extraordinary voice. "Peter and the Wolf," based on the Prokofiev score, offers brightly colored designs, but the narration by Sterling Holloway seems superfluous. "All the Cats Join In" is an upbeat evocation of the Bobby Sox era, but "Casey at the Bat" and "Johnny Fedora and Alice Bluebonnet" feel self-conscious and unfunny.
"Two Silhouettes" combines rotoscoped images of Ballets Russes de Monte Carlo stars Tatiana Riabouchinska and David Lichine with kitsch cupids, sparkles, and hearts. "The Martins and the Coys," a spoof of a hillbilly feud, has been excised in a bow to modern taste. Though it seems like a one-joke premise, this spinoff of Al Franken's Saturday Night Live character, self-help nerd Stuart Smalley, actually has some substance. And, in fact, it offers a message that wouldn't be out of place at an Al-Anon meeting (although with the laughs). Stuart, fired from his cable TV self-help show, goes home to resolve a family crisis. Dad (Harris Yulin) is an abusive drunk, Mom (Shirley Knight) is an enabler, Sis is an over-eater, and Brother has a problem with his temper. The film turns serious, but Franken actually makes the drama interesting, using humor to leaven it. And he brings a certain sympathy and resolve to the lisping, cross-eyed Stuart. Superior performances and an Oscar-winning script by Alvin Sargent make this one of the most uncompromising dramas ever made about the psychology of dysfunctional families. There are moments--particularly related to Mary Tyler Moore's anguished performance as a woman incapable of expressing her deepest emotions--when this film is both intensely involving and heartbreakingly real. Riding the strange '50s nostalgia wave that swept through America during the late 1970s (caused by TV shows like Happy Days and films like American Graffiti), Grease became not only the word in 1978, but also a box-office smash and a cultural phenomenon. Twenty years later, this entertaining film adaptation of the Broadway musical received another successful theatrical release, which included visual remastering and a shiny new Dolby soundtrack. In this 2002 DVD release, Grease lovers can also now see it in the correct 2:35 to 1 Panavision aspect ratio, and see retrospective interviews with cast members and director Randal Kleiser. All these stylistic touches are essential to the film's success. Without the vibrant colors, unforgettably campy and catchy tunes (like "Greased Lightning," "Summer Nights," and "You're the One That I Want"), and fabulously choreographed, widescreen musical numbers, the film would have to rely on a silly, cliché-filled plot that we've seen hundreds of times. As it is, the episodic story about the romantic dilemmas experienced by a group of graduating high school seniors remains fresh, fun, and incredibly imaginative.
The young, animated cast also deserves a lot of credit, bringing chemistry and energy to otherwise bland material. John Travolta, straight from his success in Saturday Night Fever, knows his sexual star power and struts, swaggers, sings, and dances appropriately, while Olivia Newton-John's portrayal of virgin innocence is the only decent acting she's ever done. And then there's Stockard Channing, spouting sexual double-entendres as Rizzo, the bitchy, raunchy leader of the Pink Ladies, who steals the film from both of its stars. Ignore the sequel at all costs. --Dave McCoy
