Aretha Franklin's Queen of Soul Ham
Aretha Franklin once said to an interviewer that soul "could be many things to many people, because it is a feeling. Painters and artists have soul. Even a chef has soul." This recipe for glazed ham is a longtime favorite of the Franklin family, prepared for holidays, celebrations, or whenever the urge to cook it strikes. Aretha makes her ham the centerpiece of almost all her family gatherings, which are usually served as a buffet with each relative and friend contributing a dish.
Serves 12.
1 (12 to 14 pound) fully cooked, bone-in ham
Cloves
1 (16 ounce) box light brown sugar
3 tablespoons French's mustard
1 (8 ounce) jar maraschino cherries, drained
1 (12 ounce) ginger-ale (preferably Vernor's)
1 (20 ounce) can pineapple rings
Baker's coconut for garnish, optional
Heat oven to 350 degrees F.
Using a paring knife, score the ham, creating a diamond pattern. Insert cloves into the corners of each diamond. Place the ham on a rack set in a 12 x 15-inch roasting pan. Cover loosely with foil, and bake until ham appears juicy, about 30 minutes.
Place brown sugar and mustard in a medium bowl, and stir to combine. Gradually add ginger ale to brown sugar mixture until a pourable consistency is achieved; you may not need the whole can. Remove ham from oven and remove foil. Pour brown sugar mixture over ham, and, using a pastry brush, coat the sides. Cover ham with foil, return to oven, and cook for 1 hour, basting every 20 minutes. Remove foil for last 20 minutes.

Saturday Night Live, John Belushi and Dan Aykroyd--as "legendary" Chicago blues brothers Jake and Elwood Blues--took their act to the big screen in this action-packed hit from 1980. As Jake and Elwood struggle to reunite their old band and save the Chicago orphanage where they were raised, they wreak enough good-natured havoc to attract the entire Cook County police force. The result is a big-budget stunt-fest on a scale rarely attempted before or since, including extended car chases that result in the wanton destruction of shopping malls and more police cars than you can count. Along the way there's plenty of music to punctuate the action, including performances by Ray Charles, Aretha Franklin, Cab Calloway, and James Brown that are guaranteed to knock you out. As played with deadpan wit by Belushi and Aykroyd, the Blues Brothers are "on a mission from God," and that gives them a kind of reckless glee that keeps the movie from losing its comedic appeal. Otherwise this might have been just a bloated marathon of mayhem that quickly wears out its welcome (which is how some critics described this film and its 1998 sequel). Keep an eye out for Steven Spielberg as the city clerk who stamps some crucial paperwork near the end of the film.

The History of Rock and Roll is a mammoth and, when considered on its own terms, frequently successful undertaking. The series, which was first presented in 1995, consumes some 578 minutes, with 10 episodes (there are no bonus features) spread out over five discs. Its pedigree (executive producers include Quincy Jones, while respected writers Peter Guralnick and Greil Marcus are listed as consultants) is impressive, as is its scope, beginning in the pre-rock days of bluesman Muddy Waters and boogie woogie master Louis Jordan and continuing through the death of Kurt Cobain and the birth of the Lollapalooza festival in the mid-1990s. Along the way, dozens of big-name performers (with the notable exception of the Beatles) are on hand to lead us through the story.
On the minus side, the format--clips of musical performances cut short by a parade of talking heads--while typical of the genre, will frustrate those who come for the music alone. Nor is it likely that anyone who studies such things will find much here that hasn't already been seen. To be sure, there are some terrific moments, like the profile of Bob Dylan (in part 5, "Plugging In"), some cool clips of relatively obscure legends like James Burton and T-Bone Walker (in part 7, "Guitar Heroes"), and rarely seen live bits with Jimi Hendrix, Steely Dan, Iggy Pop (goofing on the Dinah Shore Show in '77), and many others scattered throughout the set. Part 8, which chronicles the '70s, is surprisingly compelling (one forgets how many major artists--Bruce Springsteen, Bob Marley, Stevie Wonder--came into their own in a decade remembered largely for disco and faceless arena rock), while part 9, "Punk," is arguably the most entertaining of the lot.
In the end, it's the lack of complete musical performances that is the set's Achilles' heel. Then again, with their appetites whetted here, perhaps viewers will move on to other, more detailed looks at their heroes--beginning with, say, The Beatles Anthology. --Sam Graham

35 Up, director Steve James and associates shot more than 250 hours of footage, spanning more than six years, and their completed work actually moves like an edge-of-the-seat drama, so brimming with tension, plot twists, successes, and tragedies that its length--170 minutes--is never an issue. Yet, what makes the film more impressive is how James moves his scope beyond a competitive sports drama (although the movie has plenty of terrific, nail-biting basketball footage) and addresses complex social issues, creating a scathing social commentary about class privilege and racial division. The film opens by introducing William Gates and Arthur Agee, two Chicago hopefuls, as they are being courted and recruited by various high schools to play ball, and continues until the pair are college freshmen. James allows the audience the experience of not only watching their journeys and daily routines (it's a sobering portrait of inner-city life), but also witnessing their maturation. Each takes a separate path along the way, stumbling over several obstacles (William suffers injuries, Arthur fails to meet his coach's high expectations); but James takes particular care to stress the importance and strong commitment of each character's family along the way, giving the film a essential center. The parents and siblings emerge with as much depth and complexity as the two main "characters," and turn
