Roux
Roux is a thickening agent used in Cajun cooking.
7 tablespoons vegetable oil
3/4 cup all-purpose flour
In a large cast iron skillet, heat the oil over high heat until it begins to smoke (about 4 minutes). With a long handled metal whisk, gradually mix in flour, stirring until smooth. Continue cooking, whisking constantly until roux is a dark red brown, about 3 to 5 minutes. (Be careful not to let it scorch in the pan or splash on your skin.) Remove from heat and use as needed. Extra roux may be kept in the refrigerator indefinitely.

Carmen / Troyanos, Domingo, van Dam, Te Kanawa; Sir Georg SoltiView This Product at AmazonTatiana Troyanos was reportedly never comfortable on stage as Carmen, but she sings it ravishingly well in this recording, in good voice and at home with the character. Placido Domingo, seemingly the only Don José of our era, gives one of his best accounts of the role; Dame Kiri Te Kanawa sings beautifully as Micaëla, and Jose van Dam's Escamillo offers just the right blend of macho swagger. The dialogue is unusually well done, and Georg Solti's conducting, though lacking some Gaelic wit, gets the serious parts spot-on.

Gounod - Romeo et Juliette / Mackerras, Alagna, Vaduva, Royal Opera Covent GardenView This Product at AmazonGounod's version of Shakespeare's tragedy about two "star-crossed lovers" has never been considered a first-class opera, but as this 1994 Royal Opera production movingly shows, with the right singers and conductor it can be a quite emotional experience. Tenor Roberto Alagna is all youthful ardor and aching romance as Romeo, while soprano Leontina Vaduva plays Juliet as a lover frightfully aware of the doom the pair is moving toward. Among an able supporting cast, Francois Le Roux stands out as Mercutio. Nicolas Joel's staging rarely strays from its focus on the lovers, and it even finds room for moments of true invention and wit. Conducting the Orchestra of the Royal Opera House, Charles Mackerras again proves his worth as an estimable interpreter of this kind of traditional French opera.

Prokofiev - L'Amour des Trois Oranges (The Love for Three Oranges)View This Product at Amazon This opera, premiered in Chicago in 1921, is a farce about a morose, hypochondriacal Prince in the land of the King of Clubs. His father tries to make him laugh with the help of the wizard, Tchelio, while Princess Clarice and the Prime Minister want him to die so they can take over the kingdom, and are aided by the witch, Fata Morgana. Commedia dell'arte figures help, hinder and comment. Morgana dooms the Prince to fall in love with three oranges; after confrontations with a huge cook, a rat, and a lovely princess, all eventually turns out well. Besides the famous "March," there are no real tunes in the opera, but Prokofiev's colorful, witty score is loved by aficionados. The just-about-perfect production from the Netherlands Opera, designed and directed by Laurent Kelly, is playful, brilliantly colorful, and fun to watch. Huge playing cards make up the scenery and props and sets whirl in and around. The Prince, in his pajamas throughout, may be dreaming, and there are special effects galore. The cast could not be better; conductor Stephane Deneve has the exact pulse of this odd work and is a good sport when the action of the opera spills over into the orchestra pit at times. If you're a Prokofiev fan, this is for you--you'll probably never see a better performance of this wacky work.

Carmen, with a young-looking Placido Domingo in top form for a role he has sung hundreds of times. For Julia Migenes, it was her first performance in a role she would have trouble performing in an opera house. Her voice does not fit easily into Carmen's range, and she spent months training it, very successfully, before singing the role in a recording studio where the soundtrack was taped before the film was shot. Casting her in the role was a gamble, but it worked; she is a convincing actress--even better than Maria Ewing in the competing DVD edition from Covent Garden, though Ewing acts very well and has a more appropriate voice.
This movie version was filmed on location, conveying a kind of atmosphere, a sense of space, movement, and presence hard to achieve in a staged performance shot for television. It takes the action out of doors for many scenes. The opening titles are superimposed on the bloody conclusion of a bullfight. The changing of the guard in the opening scene, with the boys' chorus playing soldier, the crowd scenes, the dance number that opens Act II, the panoramic scenery of the smugglers' mountain hideout, all benefit from the freedom granted by movie cameras. But the music is, on the whole, more effectively performed in the Covent Garden production, which also handles close-up shots better, perhaps because it was directed with a small screen in mind. The opera house atmosphere will make hard-core opera fans feel more at home. The movie version uses the opera's original opera comique form with some spoken dialogue rather than recitatives. --Joe McLellan
