Delta Mocha Chiffon Cake

3/4 cup boiling water
1/2 cup cocoa
1 teaspoon instant coffee granules
1 3/4 cups cake flour
1 3/4 cups granulated sugar
1 1/2 teaspoons baking soda
1/2 teaspoon salt
8 large eggs, separated
1/2 cup vegetable oil
2 teaspoons vanilla extract
1/2 teaspoon cream of tartar
Chocolate-Coffee Buttercream Filling
Chocolate Fudge Frosting
Garnish: chocolate-covered coffee beans
Stir together first 3 ingredients until blended; cool.
Combine flour and next 3 ingredients in a large mixing bowl. Add cocoa mixture, egg yolks, oil, and vanilla; beat at medium speed with an electric mixer until smooth.
Beat egg whites and cream of tartar at high speed with an electric mixer until foamy. Fold into batter. Pour batter into 4 greased and floured 9-inch round cake pans.
Bake 2 layers at a time at 325 degrees F for 17 to 20 minutes or until a wooden pick inserted in center comes out clean. Cool layers in pans on wire racks 10 minutes. Remove from pans, and cool on wire racks covered with plastic wrap or wax paper to prevent layers from adhering to racks.
Spread about 1/2 cup Chocolate-Coffee Buttercream Filling between layers. Frost with Chocolate Fudge Frosting. Garnish, if desired. Store in refrigerator.
YIELD: Makes 1 (9-inch) layer cake
Chocolate-Coffee Buttercream Filling
2/3 cup butter, softened
2 1/2 cups confectioners' sugar
1 tablespoon cocoa
1/2 cup whipping cream
2 teaspoons instant coffee granules
2 teaspoons coffee liqueur*
Beat first 3 ingredients at medium speed with an electric mixer until fluffy. Microwave whipping cream at MEDIUM (50% power) until warm (do not boil).
Stir together warm cream and coffee granules until dissolved; cool. Add whipping cream mixture and liqueur to butter mixture, beating until smooth.
Makes 1 3/4 cups.
* 1 teaspoon vanilla extract may be substituted for liqueur.
Chocolate Fudge Frosting
1 cup butter, softened
1/3 cup cocoa
6 cups confectioners' sugar
1/3 cup milk
Beat butter at medium speed with an electric mixer until creamy. Add remaining ingredients, beating until smooth.
Makes 3 1/2 cups.
NOTE: To a make a torte, cut each cake layer in half horizontally with a serrated knife, and use 1/4 cup Chocolate-Coffee Buttercream Filling between layers. Frost as directed.

The tone shifts wildly, and the humor depends on your fondness for the white-trash genre--if you like it, this will tickle your ribs; if you don't, it'll fall flat as the panhandle landscape. But it must be said that the cast (including Bonnie Bedelia, Beau Bridges, Delta Burke, and Olivia Newton-John) dives right in, no matter how over-the-top their characters get. --Bret Fetzer

It must've made for a great pitch meeting: Male chauvinist advertising executive gains the ability to hear the thoughts of any woman around him. Add Mel Gibson--as Nick, the divorced "man's man" who can charm almost any woman into bed--and you've got high-concept comedy made in Hollywood heaven, right? Not necessarily. The smartest thing director Nancy Meyers did with What Women Want is dispose of this ludicrous plot contrivance before it wears out its welcome. It's fun to see Mel react to a deafening chorus of female thoughts, but his dubious "gift"--courtesy of an accidental electro-shock in his bathtub--is a mixed blessing for the audience. The women in Nick's life conveniently think in complete sitcom-friendly sentences, and the novelty quickly wears thin.
The movie improves by focusing on the fallout of Nick's predicament. Exploiting his unfair advantage, he sabotages the career of his new boss (Helen Hunt) even as he's falling in love with her; says all the right things to the aspiring actress (Marisa Tomei) who previously spurned his advances; and uses mind reading to curry favor with his 15-year-old daughter (Ashley Johnson). This two-faced scheming isn't malicious, however, and What Women Want is blessed by Gibson's amiably nuanced performance. His graceful riff on Fred Astaire is a dazzling surprise, and as Nick reforms, Gibson takes major credit for whatever depth this movie achieves. After a bit of nonsense, What Women Want has a lot to say about male and female behavior, be it noble or unappealing. It's both amusing and truthful, and that's almost as fun as a glimpse into someone else's brain. --Jeff Shannon

The core cast of stage and film veterans--Delta Burke, Dixie Carter, Annie Potts, and Jean Smart--was unusually strong, and their characters' problems and conflicts were unique to adulthood rather than the protracted adolescence common among today's comedies. The five episodes on this disc represent some of the show's strongest material, including season two's "Killing All the Right People," which--for its time--was bold in introducing a character dying of AIDS complications. Perhaps only the fantasy duo of King Kong and Bambi could be a more bizarre pairing than Robert Plant and Alison Krauss. Yet on Raising Sand, their haunting and brilliant collaboration, the Led Zeppelin screamer and Nashville's most hypnotic song whisperer seem made for each other. This, however, is not the howling Plant of "Whole Lotta Love," but a far more precise and softer singer than even the one who emerged with Dreamland (2002). No matter that Plant seems so subdued as to be on downers, for that's one of the keys to this most improbable meeting of musical galaxies--almost all of it seems slowed down, out of time, otherworldly, and at times downright David Lynch-ian, the product of an altered consciousness. Yet probably the main reason it all works so well is the choice of producer T Bone Burnette, the third star of the album, who culled mostly lesser-known material from some of the great writers of blues, country, folk, gospel, and R&B, including Tom Waits, Townes Van Zandt, Milt Campbell, the Everly Brothers, Sam Phillips, and A.D. and Rosa Lee Watson. At times, Burnette's spare and deliberate soundscape--incisively crafted by guitarists Marc Ribot and Norman Blake, bassist Dennis Crouch, drummer Jay Bellerose, and multi-instrumentalist Mike Seeger, among others--is nearly as dreamy and subterranean as Daniel Lanois's work with Emmylou Harris (Wrecking Ball). Occasionally, Burnette opts for a fairly straightforward production while still reworking the original song (Plant's own "Please Read the Letter," Mel Tillis's "Stick with Me, Baby"). But much of the new flesh on these old bones is oddly unsettling, if not nightmarish. On the opening track of "Rich Woman," the soft-as-clouds vocals strike an optimistic mood, while the instrumental backing--loose snare, ominous bass line, and insinuating electric guitar lines--create a spooky, sinister undertow. Plant and Krauss trade out the solo and harmony vocals, and while they both venture into new waters here (Krauss as a mainstream blues mama, Plant as a gospel singer and honkytonker), she steals the show in Sam Phillips' new "Sister Rosetta Goes Before Us," where a dramatic violin and tremulous banjo strike a foreboding gypsy tone. When Krauss begins this strange, seductive song in a voice so ethereal that angels will take note, you may stop breathing. 3. Speaking of electoral politics, you've been more vocal recently about your political views ... first supporting Jim Webb for Senate and now endorsing Hillary Clinton for the White House. Have you given any thought to running for office yourself?
No. I made that mistake 25 years ago, and promised myself I would never do it again. I enjoy watching and participating in politics from the sidelines, but it's best to keep some distance.
4. This is your first legal thriller in three years. How did it feel to get back to the genre that started it all, and can fans expect another thriller from you next year?
I still enjoy writing the legal thrillers, and don't plan to get too far away from them. Obviously, they have been very good to me, and they remain popular. I plan to write one a year for the next several years.
5. Your nonfiction book The Innocent Man continues to be a bestseller in paperback. In your ongoing work with The Innocence Project, have you come across another story of the wrongfully convicted that begs to be written as nonfiction?
There are literally hundreds of great stories out there about wrongfully convicted defendants. I am continually astounded by these stories, and I resist the temptation to take the plunge again into non-fiction.
