German Short Ribs

3 1/2 pounds beef short ribs
2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons shortening
2 medium onions, sliced
1/2 cup dry red wine
1/2 cup chili sauce
3 tablespoons brown sugar
3 tablespoons vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon chili powder
2 tablespoons all-purpose flour

Coat short ribs in mixture of 2 tablespoons flour with salt and pepper.

Melt shortening in large skillet; add ribs and brown on all sides. Pour off excess fat.

In crockpot, combine ribs, onions, wine, chili sauce, brown sugar, vinegar, Worcestershire sauce, mustard and chili powder. Cover and cook on LOW for 6 to 8 hours.

Turn control to HIGH. Thicken with 2 tablespoons flour that has been dissolved in a small amount of water. Cook on HIGH about 10 minutes or until slightly thickened.

Serve over wide noodles.

Makes 6 servings.

Wim Wenders's most purely romantic film is like poetry on celluloid, a celebration of the transient and fragile moments of being human: the warmth of a cup of coffee on a cold day, the embrace of a friend, the touch of a lover, the rapture of love. Opening with an angel's-eye view of Berlin in silvery black and white (delicately captured by the great cinematographer Henri Alekan, who photographed Jean Cocteau's Beauty and the Beast 40 years earlier), it transforms into a gauzy color world when Damiel "crosses over" by sheer will. Peter Falk plays himself as a fallen angel with a special sensitivity for celestial visitors ("I can't see you, but I know you're there," he proclaims), and Otto Sander, whose smiling eyes brighten a face etched by eons of waiting and watching, is Damiel's partner. Gary Cooper plays Alvin York, the real-life country lad and sharpshooter drafted to fight during World War I but blocked from killing by his pacifist sentiments. Schindler's List gains much of its power not by trying to explain Schindler's motivations, but by dramatizing the delicate diplomacy and determination with which he carried out his generous deeds.

As a drinker and womanizer who thought nothing of associating with Nazis, Schindler was hardly a model of decency; the film is largely about his transformation in response to the horror around him. Spielberg doesn't flinch from that horror, and the result is a film that combines remarkable humanity with abhorrent inhumanity--a film that functions as a powerful history lesson and a testament to the resilience of the human spirit in the context of a living nightmare. --Jeff Shannon
