Vietnamese Pork
From the kitchen of Kevin Taylor, the BBQ Guru
This one I have stir fried AND cooked as a whole loin. This recipe is for stir frying. To grill, just don't cut into strips.
2 pounds pork tenderloins
4 lemongrass stalks
2 tablespoons dark brown sugar
1 tablespoon peppercorns
2 tablespoons fish sauce
2 tablespoons sesame oil
6 garlic cloves
2 tablespoons vegetable oil
6 tablespoons oyster sauce
1 tablespoon honey
1 tablespoon dark soy sauce
2 tablespoons sake
Cut pork into 2-inch slices.
Chop lemongrass into 2-inch pieces and crush with mallet. Be sure they stay intact. After marinating you will remove these.
Combine garlic, brown sugar and peppercorns and crush to make a paste.
Add veggie oil, sake, fish sauce and 1 tablespoon sesame oil. Add the lemongrass.
Pour this marinade over the pork and marinate overnight.
Heat 1 tablespoon oil in wok.
Stir fry pork until done.
Prepare the finishing sauce by combining the oyster sauce, 1 tablespoon sesame oil, 1 tablespoon honey and 1 tablespoon soy sauce.
Add to wok and heat through.
Serve over rice.

The coffee filter is stainless steel and there are three parts (filter, screw-on damper, and lid). Simply place the filter on top of a cup, so it looks like a hat. Add 2-3 teaspoons of coffee to the filter, then screw on the damper so it's snug (not tight). Shake the filter a bit to settle the coffee. Fill up the cup about 1/3 with hot water then wait 20 seconds. Unscrew the damper 2 turns and fill the cup entirely with hot water. Place the lid on and wait a few minutes until the water has dripped though. Add a spoonful (or more) of sweetened condensed milk to the cup before or after you start the process. Director-cowriter Timothy Linh Bui and his brother, writer-producer Tony Bui, have made a movie that's obviously very sympathetic to its Vietnamese characters;
Green Dragon is also apparently quite realistic, and refreshingly lacking in excessive sentimentality. Much of it is in Vietnamese (with English subtitles, of course); indeed, one senses that nominal top-liners Patrick Swayze and the always-reliable Forest Whitaker are on hand more for their star power than for the importance of their roles. In the end, this is a good story that's rather well told. The DVD is packed with extras, including director commentary, deleted scenes, trailers, and a behind-the-scenes documentary.

In "On the Rainy River," the character Tim O'Brien responds to his draft notice by driving north, to the Canadian border where he spends six days in a deserted lodge in the company of an old man named Elroy while he wrestles with the choice between dodging the draft or going to war. The real Tim O'Brien never drove north, never found himself in a fishing boat 20 yards off the Canadian shore with a decision to make. The real Tim O'Brien quietly boarded the bus to Sioux Falls and was inducted into the United States Army. But the truth of "On the Rainy River" lies not in facts but in the genuineness of the experience it depicts: both Tims went to a war they didn't believe in; both considered themselves cowards for doing so.
