Deep Fry Batters

Here is the secret to successful deep-frying....HOT OIL!!! You need to get that oil around 375-400 degrees F. Use a canola or some other form of veggie oil...they tend to have higher burn temps.
What you want is for the oil to IMMEDIATELY crisp up the batter.....this forms a protective coating around the food. If the oil does NOT crisp immediately it will simply soak into the batter and cause greasy food. I learned this many years ago when my father and I owned a chain a A&W Root Beer stands.
I have used my cast iron skillet for this chore for years. It holds the heat much better than other fryers do. If you are doing multiple batches, let the heat get hot again after cooking a batch...usually only takes a few minutes.
Also, remember to salt or apply other seasoning as soon as they come out of the fryer......that way they will absorb it.
Now a few recipes I have used for deep fry batter........
MEAT BREADING
1 cup flour
1/2 cup cornstarch
2 teaspoons salt
1/2 teaspoon Accent
1 teaspoon baking powder
1 cup water
2 teaspoons oil
Combine all and beat with electric beater until smooth. Dip meat and deep-fry.
CHICKEN NUGGETS BATTER
1/2 cup flour
3/4 cup cracker crumbs
1/2 teaspoon paprika
2 teaspoons chicken seasoning
Mix together flour, cracker crumbs, paprika and seasoning. Coat/dredge chicken cubes and deep fry.
BEER BATTER
Everyone needs a beer batter...this is my favorite for fish!
1 cup all-purpose flour
1 cup cornstarch
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons seasoned salt
1 bottle beer
Mix and coat. Fry at 375 to 400 degrees F.
EGG BATTER
2 large eggs
1 tablespoon canola oil
1/2 cup milk
3/4 cup flour
1 teaspoon baking powder
1 teaspoon salt
Mix all together and dip and fry.

Thanks to a fortuitous intersection of talent and fate, 22-year-old Josh Groban hasn't finished his senior year in performing arts school but has already released his sophomore effort on a major major label. Fans of the young vocal phenom's debut will find much to enthrall them here, even if it nudges the singer closer to the center of producer/mentor David Foster's MOR pop sensibilities. Eschewing much of its predecessor's more overt classic-lite pretensions and pop-rock covers for a slate of dramatic, Eurocentric ballads that serve as a showcase for the singer's inviting baritone, Groban shrewdly positions himself as the American alternative to the Bocelli-Watson crossover axis. "Caruso" may find the singer falling short of its operatic inspiration, but "Oceano" and "My Confession" quickly showcase his true dramatic range (which seems to all but yearn for a bona fide Broadway musical challenge), while a vocal take of Bacalov's graceful "Il Postino" theme uses classical virtuoso Joshua Bell's violin flourishes to good effect. To his credit, Groban displays some promising efforts at songwriting collaboration on the bittersweet "Per Te" and "Remember When It Rains," while the ambient/ethnic soundscape of Deep Forest's "Never Let Go" offers a teasing alternative to the record's otherwise melodramatic production formula. Groban has found commercial triumph via Foster's mentoring, but there remains a nagging sense here that he hasn't truly pushed himself as an artist--yet. --Jerry McCulley

But between a spotlight stealing performance in Martin Scorsese’s Rolling Stones concert flick Shine a Light in the same year and the appearance of Skin Deep, Guy has returned to the crossover arena as the magnetic and dynamic blues journeyman he has always been. Drop the laser anywhere on these dozen tunes, all but five authored or co-penned by the Chicago guitarist, and it’s like a blast of hot wind in the face. Even with drummer Tom Hambrige’s somewhat slick production, Guy is in your face, spitting out words with strutting swagger and peeling off molten licks that leave smoldering scars. Guests such as Derek Trucks and Eric Clapton seem like an afterthought, yet the former’s sensitive slide work on the titular ballad brings a crying gospel quality to the song. Trucks’ wife, Susan Tedeschi, makes a vibrant vocal foil on the mid-tempo "Too Many Tears," an obvious single. Roots guitar fans will thrill at the six-string intensity of the ferocious slow blues "Out in the Woods" where Guy unleashes torrents of raw sound that make this disc so consistently riveting and a highlight in the legend’s extensive catalog. --Hal Horowitz

How do you follow a debut record that achieved out-of-the-blue grandeur on its way to selling a quarter of a million copies? For Maine's Ray LaMontagne, it's all about shaking up the formula, evading repetition and delivering the unexpected. Till the Sun Turns Black finds the introspective singer/songwriter complementing his folk-country ways with traces of strings and horns and spooky soulful background voices. Songs like "You Can Bring Me Flowers" and "Three More Days" are the most R&B-influenced, the latter shuffling about ala The Band or Tony Joe White. Despite its brooding lyrics, "Empty" has a rollicking, almost breezy delivery, a perfect balance to either the hushed title track, the unnerving "Be Here Now" or the horn-fortified waltz, "Gone Away From Me." Throughout the 11-song sequence, and especially on the final song "Within You," LaMontagne's voice remains the record's most crucial element, as vibrant as it is tattered and as harsh as it is flawless. --Scott Holter

You don't fool with Mother Nature, spit into the wind, remake Casablanca, or trash the land of Oz. Perhaps that is why the 1985 live-action sequel split critics and audiences alike. The 1939 classic musical is so beloved that it's almost impossible to imagine seeing Dorothy in shock therapy, a crumbled yellow brick road, the ruins of Emerald City, and the Tin Man turned into stone. But L. Frank Baum, the author of the original Oz books, portrayed just that with his continuing stories of Dorothy. When you get by these tough facts, the film version is solid entertainment for the over-7 set.
Dorothy (a 10-year-old Fairuza Balk in her debut) is back in Kansas, where Aunt Em (Piper Laurie) is at the end of her rope: her niece is not sleeping and going on about a place called Oz. Therapy may be the answer, but luckily the scary clinic goes dark before Dorothy can be, er, cured (but the lead-up will scare the munchkins out of most kids). She wakes up in the land of Oz, now in tatters, and searches for its king, the Scarecrow. A new set of friends, including a tin soldier, a talking chicken, and a pumpkin man, help her against new villains, including Princess Mombi (Jean Marsh)--complete with a set of detachable heads--and the evil Nome King (Nicol Williamson with a great assist from Will Vinton's Claymation). The sole directorial effort of Oscar-winning editor Walter Murch is stuffed with marvelous effects that foreshadow later works by Tim Burton and the Henson non-Muppet films. --Doug Thomas

Wolfgang Petersen (In the Line of Fire) made his first English-language film with this 1984 fantasy about a boy (Barret Oliver) visualizing the stories of a book he's reading. The imagined tale involves another boy, a warrior (Noah Hathaway), and his efforts to save the empire of Fantasia from a nemesis called the Nothing. Whether or not the scenario sticks in the memory, what does linger are the unique effects, which are not quite like anything else. Plenty of good fairy-tale characters and memorable scenes, and the film even encourages kids to read. --Tom Keogh

The peculiar genius of schlock-king Roger Corman is in full bloom with this extremely gory, pointedly offensive homage to 1950s monster movies (with a generous helping of Alien thrown in for good measure), in which a legion of mutated salmon-men terrorize a small town in their search for unwilling female companionship. (Potential viewers should be warned that this movie goes to great lengths to show what earlier films in this genre had only implied.) A guilty pleasure for exploitation fans with a strong stomach and a twisted sense of humor. For what it's worth, director Barbara Peters has claimed that additional shock scenes were inserted by producer Corman without her knowledge. The glop-intensive special effects were devised by Rob Bottin, who later went on to gross out the masses with his work on Seven, Robocop, and John Carpenter's graphic remake of The Thing. --Andrew Wright

During the year, Larry also tangles with an X-rated dessert, an unsympathetic senator (Rep. Barbara Boxer as herself), an inebriated chauffeur (Toby Huss), the infinite superiority of Ted Danson, and the usual games of one-upmanship with Jeff Greene (Jeff Garlin), Richard Lewis (himself) and Marty Funkhouser (Bob "Super Dave" Einstein, brother of director Albert Brooks).
Since Curb Your Enthusiasm takes its inspiration from David's real life, the big news arrives when Cheryl, a character based on environmental activist Laurie David, walks out on him. Then their friends pick sides. Thereafter, things really start to go downhill, resulting in some of Larry's funniest faux pas ever--until R&B vocalist John Legend steps in to save the day. Not literally, but his soulful singing sets the scene for the surprisingly sweet finale. For anyone who thought the Oscar-winning documentary March of the Penguins was the most marvelous cinematic moment for these nomads of the south, you haven't seen nothing yet. Happy Feet is an animated wonder about a penguin named Mumble who can't sing, but can dance up a storm. George Miller, the driving force behind the Babe (and Mad Max) movies, takes another creative step in family entertainment with this big, beautiful, music-fueled film that will have kids and their parents dancing in the streets. From his first moment alive, Mumble (voiced Elijah Woods) feels the beat and can't stop dancing. Unfortunately, emperor penguins are all about finding their own heart song, and the dancing youngster--as cute as he is--is a misfit. Luckily, he bumps into little blue penguins and a Spanish-infused group (led by Robin Williams) and begins a series of adventures. Miller has an exceptional variety of entertainment: Busby Berkley musical numbers, amusement-park thrills, exciting chase sequences (seals and orca lovers might like think otherwise), and even an environmental message that doesn't weigh you down. Best of all, you don't know where the movie is going in the last act, a rare occurrence these days in family entertainment. A fusion of rock songs, mashed-up and otherwise, are featured; this movie is as much a musical as a comedy. Mumble's solo dance to a new version of Stevie Wonder's "I Wish" by Fantasia, Patti, and Yolanda may be the most joyful moment on camera in 2006. --Doug Thomas
On the DVD
There are two new animated sequences, which aren't incorporated into the film. One's a half-minute hackysack-themed bit, but the other is a good-looking, two-minute scene featuring the late Steve Irwin as an albatross, who, with Mumble, encounters a blue whale. "Dance Like a Penguin: Stomp to the Beat" is hosted by Savion Glover, whose dancing was motion-captured for the film, but other than a couple basic tips, it's pretty much a demonstration rather than a lesson. In addition to the two music videos (Gia's "Hit Me Up" and Prince's "The Song of the Heart"), "I Love to Singa" is an appropriately matched 1936 Merrie Melodies cartoon in which a young owl ruffles feathers by wanting to sing jazz for his classical-music-loving family. --David Horiuchi

Based on a novel by Dick King-Smith, author of The Sheep Pig (from which Babe was adapted), the touching and often spectacular The Water Horse: Legend of the Deep ingeniously presumes to explain the truth behind "Nessie," i.e., the Loch Ness Monster. The story, told in present day to a couple of American tourists by a kindly gentleman (Brian Cox) in a pub, begins with a lonely boy, Angus (Alex Etel), pining for his father, who is serving in the Royal Navy during World War II. Angus, along with his sister (Priyanka Xi) and mother (Emily Watson), live on an estate that has been billeted by soldiers in the Scottish Highlands, near Loch Ness. The troop's commander (David Morissey) has an eye for mom, suspicions about a mysterious handyman, Lewis (Ben Chaplin), who is also a war hero, and an absurd contention that the Highlands are the real frontline in the war against Germany.
Into this intriguing drama comes a completely different element, a fantastical creature of Celtic mythology that befriends Angus and is, in fact, the sea-beast who will eventually be known as the Loch Ness Monster. Trying to hide the dinosaur-like fellow, nicknamed Crusoe, Angus enlists Lewis to transfer it to the lake, where boy and serpent have extraordinary adventures together until human stupidity threatens Crusoe's existence. A true family film, there is a lot for adults to like about the grownup story in The Water Horse. Meanwhile, the wistful relationship between Angus and Crusoe--each of whom helps the other move past obstacles toward their individual destinies--will leave children feeling both happy and melancholy in the best possible sense.
