Fried Puffs (Dutch)

3/4 cup milk
1/2 cup granulated sugar
1/4 cup oil
2 eggs
3 teaspoons baking powder
1/2 teaspoon salt
2 1/2 cups all-purpose flour
1/2 cup raisins or chopped apples (optional)
1/4 cup granulated sugar mixed with 1/2 teaspoon cinnamon

In large bowl on low speed mix milk, sugar, oil, eggs, baking powder, salt and 1 cup of the flour. scrape bowl constantly and mix only about 30 seconds until combined. Increase speed to medium and continue mixing for 2 minutes scraping bowl as needed.

Stir in remaining flour and fruit (if using fruit).

In a high sided fryer heat 2 to 3 inches of oil. Drop batter by teaspoonsful into hot oil. As the puffs rise, turn them over. Fry for about 2 minutes on each side or until golden brown. Remove and drain on paper towels or brown bags (preferred).

Roll puffs in sugar mixture before serving.

TIP: Drained fried foods on brown paper grocery bags on a cookie sheet in the oven at 200 to 250 degrees F. They will not be greasy!

Fade to Black is a document of Jay-Z's self-proclaimed final concert; a grand affair that took place before a sold-out crowd at New York's Madison Square Garden in November 2003. (But anyone who follows celebrity news knows that Jay-Z was out of retirement and back performing at the Garden just a year later.) Fade to Black is a legitimately powerful record of a truly historic event in the annals of rap. Muttering offhand narration with typical bored, streetwise affect, Jay hails the concert as a momentous occasion for being the first time a hip-hop show was allowed to headline at the Garden.

It's unlikely that the full impact of the live performances will hit home to viewers unfamiliar with Jay-Z and his Roc-A-Fella Records stable of artists. Another frustration is trying to identify the array of visitors who trade raps on Jay's stage. Included in the star-studded lineup are Missy Elliott, Foxy Brown, Pharell, Ghostface Killah, Beanie Sigel, Memphis Bleek, and R. Kelly. One unmistakable figure--and we do mean figure--is Jay's squeeze Beyonce, who raises the temperature and the roof with her skimpy outfit, flowing hair, soulful yowl, and sexed-up dance routine that leaves her boyfriend and the whole of Madison Square Garden slack-jawed with animal desire.

Twenty cameras captured the event, and some of the most powerful sequences are sweeping moves across the swirling, blissed-out masses as they lip sync along in perfect unison with Jay-Z's complex, profane, quick-witted raps. Less effective are intermittent cutaway segments that show the artist in various studio settings working up beats and rhymes. These amateurish home video breaks may give some insight to Jay's perfectionism and dedication to his craft, but they detract from the visceral power of the beautifully executed performance footage. --Ted Fry

They renamed her "Mrs. Brisby" for NIMH. That acronym stands for the National Institute of Mental Health, and the rats that live near Mrs. Brisby came from NIMH--they have strange ways. But they're the only ones who can save her house and her children, so Brisby seeks them out with the help of a humorous crow (Dom DeLuise). The magic gets laid on a little thick but this is Don Bluth's most successful attempt to achieve a complete, sincere, animated film. It's often forgotten, but it's a true surprise and a rare treat in the vast wasteland of insubstantial children's fare. --Keith Simanton

For passionate fans of Rent--the popular Broadway rock musical that updated La Boheme with electric guitars, steel drums, strippers, and drag queens--Rent: Filmed Live on Broadway is a must-have. Written and composed by Jonathan Larson (who died suddenly of an aortic aneurysm just before the show premiered), Rent follows an absurdly clean-cut gaggle of hipster artists who, after having been squatting in a run-down building for a year, are now being told they have to pay that rent by the building's owner, a former friend. At least, that's the plot point that launches everything; really, the musical is about modern romance, grappling with AIDS, and celebrating the creative spirit. This film documents the last performance of the Broadway production, which ran for 12 years. Though the aggressive camera moves and sometimes frenetic editing seem intended to make the film feel less stagebound, this Rent first and foremost captures the stage experience. The production's raw set and self-conscious theatricality (which highfalutin' theater folk might call "Brechtian") creates genuine show-biz razzle-dazzle and helps distract from some of the cliches in the musical itself. There are no famous faces (the closest is Tracie Thoms, who played the same role, the lesbian lover of a performance artist, in the movie version), but the cast is solid and exuberant, throwing themselves wholeheartedly into the show's unapologetically sincere paeans to life and love. --Bret Fetzer

Twenty years before the Farrelly Brothers turned raunch into acceptable film comedy, the team of David Zucker, Jim Abrahams, and Jerry Zucker exploited it first. The college threesome made it big with Airplane! in 1980, but this 1977 cinematic version of their live theater show is ground zero for their talents. Like The Groove Tube, Kentucky Fried Movie is a mishmash of sketches, fake commercials, and parodies with no central theme--except their crudeness and laugh-out-loud humor. Highlights include a commercial for "Scot Free," a board game based on the Kennedy assassination conspiracy, "The Wonderful World of Sex," in which a couple goes through foreplay with a self- help narrator instructing them step by step, and a 20-minute spoof of Bruce Lee films entitled "A Fistful of Yen." Brazen to a fault, the movie will reach for any punch line, no matter how crude (and those who flocked to the film's initial release looking for R-rated sex will remember the final sketch and the infamous trailer for "Catholic High School Girls in Trouble.") Directed by then-unknown John Landis on a shoestring budget, the film has aged. But crassness, when it's this funny, is forever. --Doug Thomas

Why Photography Matters as Art as Never Before

From the late 1970s onward, serious art photography began to be made at large scale and for the wall. Michael Fried argues that this immediately compelled photographers to grapple with issues centering on the relationship between the photograph and the viewer standing before it that until then had been the province only of painting. Fried further demonstrates that certain philosophically deep problems—associated with notions of theatricality, literalness, and objecthood, and touching on the role of original intention in artistic production, first discussed in his contro­versial essay “Art and Objecthood” (1967)—have come to the fore once again in recent photography. This means that the photo­graphic “ghetto” no longer exists; instead photography is at the cutting edge of contemporary art as never before.
