Swiss Cheese Quiche

Crust
1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup (1 stick) sweet butter
1/4 cup ice water
9-inch deep-dish pie pan

Place dry ingredients in food processor. Cut butter into four chunks and mix using the metal blade. With machine running, slowly pour water through feed tube. Mix until ingredients form a ball of dough, approximately 2 to 3 minutes.

Place dough on surface sprinkled with flour. Cover rolling pin with flour and roll dough into a circle large enough for pie pan. If dough tears, simply pat edges together with fingers.

Cover half of dough circle with aluminum foil and fold remaining half over the foil. Repeat with a second piece of foil, so dough is folded into quarters. Lift folded dough and place over 25% of greased pie pan. Unfold dough so entire pan is covered. Pat into place. Trim excess dough from rim.

Quiche
1 large onion, diced
2 large zucchini, sliced thin
3 tablespoons olive oil
6 eggs, beaten
12 ounces Swiss cheese, diced
1 to 2 cups cream
Salt and white pepper, to taste

Preheat oven to 350 degrees F.

In a large saucepan, saut� onion and zucchini in olive oil.

Place onion mixture, eggs, cheese and salt in a two-quart measuring pitcher. Add cream until contents reach six cups.

Pour into prepared dough in pie plate. Bake for 40 minutes or until crust browns, top of quiche turns light brown and custard feels firm. Serve immediately or freeze and reheat.

Yield: 8 to 10 servings

The selections here relate to themes associated with the Holy Spirit--the fire of creation, wisdom, the life-giving spirit, and love. The imagery of Hildegard's visionary texts is replete with references to the basic elements--air, earth, fire, and water. The results are boldly original, at least within the restricted confines of chant, which offer compelling listening experiences as performed in the lustrous tones of Anonymous 4. The program includes a pair of Hildegard's most-rhapsodic extended visionary pieces, the consoling "O spirit of fire, bringer of comfort," and "I am the great and fiery power," whose soaring opening musical lines still can shock. The film opens on a ship jostled and torn by a raging storm while a family struggles to make it through alive. Tossed into a reef near a deserted tropical island, father John Mills takes charge and the family soon turns their island prison into a veritable paradise. Their multilevel tree house, built in record time, is complete with running water and a working pipe organ scavenged from the ship, while their grand yard is abloom in English roses. As a tale of hardship and pioneer pluck, the tale is pure fantasy, but as entertainment it's energetic and appealing. The island is impossibly populated by ostriches, zebras, lions, and elephants, a private zoo that delights the youngest boy and offers plenty of comic relief. The two older brothers discover even wilder life when they rescue the prisoner of oriental pirates (led by hard-bitten Sessue Hayakawa). There's little real danger anywhere in the film--even the climactic battle with the pirates is a cartoonish affair, with coconut bombs and nonlethal booby traps, until the final desperate, deadly moments. Hardly a faithful adaptation of the novel, but a lush, beautifully photographed film and an entertaining adventure safe for all ages. Dorothy McGuire costars as the proper, worry-prone mother. One thing Shirley Temple did extremely well (besides sing, dance, and act) was turn the cranky cuddly. She'd done it effectively, two years prior, in 1935's The Little Colonel with grandfather Lionel Barrymore. Now in Heidi she turns her reclusive grumpy grandfather, Adolf (Jean Hersholt), into the loving sort she knows he really is. Heidi is an orphan, dumped into the Swiss Alps by self-centered Aunt Dete (Mady Christians) onto a grandfather she's never known, but they soon learn to love each other. Heidi's mercenary aunt returns and sells (!) Heidi to a cruel woman, appropriately named Fraulein Rottenmeier (Mary Nash). Adolf sets out on a quest to find his granddaughter. Meanwhile, Heidi charms Klara Sesemann (Marcia Mae Jones), the wealthy handicapped girl in Fraulein Rottenmeier's care. Look for a delightful Arthur Treacher as the Sesemann butler. There's a cute fantasy production number, "In Our Little Wooden Shoes," featuring Temple in various period costumes. Throughout Heidi, Temple is, as always, wonderfully joyful. This is perhaps the best-known rendering of the popular children's story by Johanna Spyri (it's been filmed some 10 times). --N.F. Mendoza

Bill Maher - I'm Swiss

"I don't hate America," comedian Bill Maher declares during I'm Swiss, recorded in March 2005 in Portland, OR. "I love America. (But) I'm embarrassed." And there we have not only the source of the title (his discomfiture, he jokes, has led him to pretend he's from another country) but also the crux of Maher's overall presentation on this, his third DVD taken from a program that was first shown on HBO. Maher's tendency toward smugness and superiority regularly provoke the wrath of his opponents on the far right. But despite his disingenuous claims to the contrary ("I'm not making this up, I'm just reporting," or "I'm not being partisan"), he certainly can't be accused of not having a point of view. His targets are many in I'm Swiss, ranging from reality TV to Cialis ("the boner pill") and even Civil War reenactments, but he reserves most of his scorn for "the morals and values crowd" and George W. Bush. He excoriates the former for turning the '04 presidential election into "a referendum on boys kissing," part of their campaign to "legislate taste" while using their "nonsensical and spiritually unnecessary" religious devotion to claim the high moral ground. As for Bush, Maher's comment that "sometimes this guy is so retarded, he could be on death row in Texas" is one of his milder jabs; and when it comes to the Iraq war, describing Baghdad as "the galleria at Halliburton Square" pretty much sums up Maher's feelings about that. Much of what Maher says during this 99-minute monologue (plus a Q&A session with the audience that's included in the bonus material) is genuinely funny, especially a segment called "Master P's Theater," in which he translates rap lyrics from Ebonics into "white." But make no mistake about it: Bill Maher is one infuriated fellow, and whether you love him or loathe him, I'm Swiss provides ample food for thought. --Sam Graham
